Sheet Pan Maple Dijon Chicken & Veggies (Easy Cleanup Hack)
Put this delicious sheet pan chicken with an easy maple Dijon glaze on your meal plan this week!

One sheet pan, three compartments, and an entire dinner ready to go!
This easy chicken, sweet potato and Brussels sprouts sheet pan meal is my new favorite way to make a cozy, flavorful dinner with minimal cleanup.
The chicken gets coated in a simple brown sugar paprika seasoning that caramelizes beautifully as it roasts. The sweet potatoes are cut in half and roasted cut-side down for tender, caramelized edges, while the Brussels sprouts get golden and crispy.
And the best part? Everything gets finished with an easy maple Dijon mustard sauce that’s sweet, tangy, and absolutely delicious, drizzled over the entire meal.

This foil and parchment paper hack works great to create separate compartments!
Even if you simply use the three-compartment idea with your favorite seasonings and vegetables, this is such a versatile dinner method. And if you’re feeding a crowd, it’s easy to double the ingredients and use a second sheet pan for a larger meal.

Here are some simple chicken sheet pan variations:
- Swap chicken breasts for boneless chicken thighs.
- Add red onion or carrots to the Brussels sprout section.
- Use honey instead of maple syrup.
- Add a pinch of cayenne to the chicken seasoning for a little heat.
- Add chopped pecans or walnuts over the finished sweet potatoes.
- Sprinkle the finished dish with fresh parsley for a pop of color.

A simple and flavorful sheet pan dinner featuring brown sugar paprika chicken, roasted sweet potatoes and Brussels sprouts, all finished with a delicious maple Dijon sauce.
Ingredients
For the sheet pan chicken:
- 2 skinless chicken breasts (about 1.5 pounds)
- 2 tbsp olive oil (you’ll use it to rub all over chicken and veggies)
- 1 tablespoon brown sugar
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt & 1/2 teaspoon pepper
- 2 sweet potatoes
- 12 oz. fresh Brussels sprouts, halved
For the maple dijon sauce:

Preheat the oven to 400 degrees and prep a sheet pan with two skinny rolls of foil and parchment paper on top. This will create 3 compartments on the pan.

Prep the chicken:
On a cutting board, pound the chicken evenly. Transfer it to one section of the sheet pan and drizzle with olive oil on both sides. Combine the seasoning and sprinkle it on both sides as well.

Prep the Brussels sprouts:
Toss them with a little olive oil, salt and pepper, then arrange them cut-side down in the second section of the sheet pan. Sprinkle with a dash of salt & pepper.

Prep the sweet potatoes:
Wash the sweet potatoes and cut them in half lengthwise. Lightly brush the cut side with olive oil and place the sweet potatoes cut-side down in the 3rd section of the sheet pan.

Place the sheet pan in the oven and roast for approximately 25–30 minutes, or until the chicken reaches 165°F in the thickest part and the vegetables are tender. If the chicken is finished before the sweet potatoes are completely tender, simply remove the chicken and return the sweet potatoes and Brussels sprouts to the oven until done.
(I removed the chicken and cooked the veggies an extra 10 minutes.)
Here are some extra tips for success in making sheet pan chicken:
- Pound the chicken first. This is one of my favorite little tricks for chicken breasts. Getting them to an even thickness helps them cook more evenly and keeps the thinner portions from drying out before the thickest part is done.
- Don’t skip the brown sugar. Just a little brown sugar adds a delicious caramelized flavor to the paprika-seasoned chicken.
- Keep the sweet potatoes cut-side down. This gives the exposed side plenty of contact with the hot pan so it can caramelize while the inside gets soft and tender.
- Make the sauce at the end. I love using the maple Dijon mixture as a finishing sauce rather than putting it on the chicken before roasting. It stays fresh and tangy, and you can drizzle as much or as little as you like.

I warmed up the leftovers for lunch, and it was just as delicious. Maybe next week I will make two sheet pans and use it to meal prep lunches! I think swapping the Brussels sprouts for broccoli would be tasty too!
