As a vegetarian, I usually get the squash ravioli and its under $4 regularly at my local Target! I stock up when these deals come around and the kiddos even gobble em up! There’s a touch of honey in them so they’re a bit sweet and I add more tomatoes and kale. Super yummy for a quick prep meal for our busy family.
Thank you! I’m trying to go meatless afew nights aweek but other than spaghetti, veggie burgers and veggie stir fry I have a hard time thinking of stuff to cook! These might be an thing for every now and again.
Lentil soup, tortilla soup, noodle salad, rice and beans…just a couple of suggestions for ya! We try to eat vegetarian a few nights a week too because halal meat is getting more and more expensive!
Veggie fried rice is one of our favorites. I make a double batch of brown basmati rice and use half for one meal as a side and put the leftover in the fridge for fried rice later. Saute onion, garlic, ginger, celery, carrots, broccoli etc til tender, add the rice, coik for a gew minutes til hot, make a well in middle and add a couple beaten eggs and let them cook in the middle til set, then mix together. I toss in frozen peas, edamame and dry roasted peanuts for the last few minutes. Easy to use whatever veggies you have or prefer. Add curry powder or tumeric if you like. Takes me ten minutes tops!

We just had the teriyaki kind for dinner and it was great. I’m nine weeks pregnant and have morning sickness so my recommendation means a lot! You can recognize all the ingredients! It’s the first gluten free teriyaki we’ve found since my husband went GF two years ago. I will go back and get four more this week for more exhausted first trimester evenings.
