Heat a skillet on the stove to medium heat. Add two slices of cheese to the middle of the pan.

Add a few slices of pickles to the cheese and let it cook for a few minutes until the cheese is golden. Turn off the burner and let it cool for a minute to harden.

Use a spatula to transfer the "sandwich" to a plate. Add the chicken on top. Fold it over and enjoy it warm. As it cools, the cheese will crisp a little.

Gooey, Golden, & Easy! Make this fried cheese sandwich today! 

Sometimes the best comfort food comes from the simplest ingredients hiding in your fridge or pantry. Today, we’re taking sliced cheese, sliced pickles, and canned chicken and turning them into a cheesy, golden, crave-worthy melted cheese sandwich using your frying pan.

Using cheese as the “bread” here is genius and tastes amazing. Keep this in mind when you are in a rush and need a quick low-carb snack or lunch!

What a great 3-ingredient recipe that has 22 grams of protein! 

For the chicken, I used a packet of shredded cooked chicken for convenience.  You can use leftover rotisserie, chopped cooked chicken breasts or even tuna would be great!

This is not the famous cold cheese and pickle sandwich popular in the UK with chutney. That version features bread.

More tips on how to make a cheese and pickle sandwich:

  • After making a few of these cheese sandwiches, I figured out that blotting the excess liquid on the pickles first avoided a watery final product.
  • Swap the pickles for jalapeños if you like heat.
  • If you’ve got mayo or mustard, swipe a thin layer on top of the chicken.
  • It helps to use a nonstick pan for this idea. I am using my 10-inch Hexclad frying pan here and love it.
