Love Corn on the Cob?🌽
This summer make your own version of mouth-watering Mexican grilled street corn that’s bursting with bright flavor and a tasty creamy texture. This idea takes very little preparation and promises to be the HIT of your next BBQ!
I recently made Mexican Grilled Corn as a side dish and everyone LOVED it!
Mexican Grilled Corn

- 6-8 ears of sweet corn
- 1/2 cup sour cream (or try Mexican Crema)
- 1/2 cup Mayonnaise
- 1/2 cup cilantro, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon chili powder (or to taste)
- juice from one lime
- zest from one lime
- 1/2 cup cotija cheese, crumbled
1.) Wash and husk corn. (Note: I decided to tie husks at the bottom to use as a handle, but will soak corn next time for 30 minutes before grilling to prevent burning.)
2.) Heat grill to about 400 degrees and oil the grates. Grill corn for about 10 minutes turning a couple times until evenly cooked.
3.) Whisk together mayonnaise, sour cream, cilantro, lime zest, lime juice, garlic, and chili powder.
4.) Take corn off the grill and brush on the cream mixture.
5.) Roll corn in crumbled Cotija cheese and add extra chili powder and lime juice if desired. (In case you can’t find Cotija try Parmesan.)
Get ready to bite into HEAVEN! SO GOOD!
