Try making a warm soft single-serve cookie when you are in the mood for a sweet treat. I love that you can make this cookie in the microwave in 50 seconds and it requires just 6 simple ingredients. If you have a canister of protein powder in your pantry, let’s make an easy protein cookie!
How great tasting can this protein cookie recipe be?
This grain-free cookie could surprise you, honestly. The result is a warm treat that is sweet, soft and full of chocolate flavor. I promise it will taste good and it’s a bit healthier than your average cookie. Yippee! Turns out protein powder is a great alternative to flour in this instance.
My teenage daughter has been making this cookie inspired by Instagram user FitFoodieSelma. She has also made cookie dough from protein powder and enjoys these little baking snack hacks. I was skeptical at first, but am so glad I finally tried this microwave cookie for myself.
1 Minute Protein Cookie

A soft chocolate chip cookie using protein powder. It cooks in just 50 seconds using the microwave.
Ingredients
- 1 tablespoon peanut butter
- 2 teaspoons monk fruit sweetener
- 1/2 tablespoon unsweetened cocoa powder
- 1 tablespoon protein powder
- 2 tablespoons coconut milk (or milk of choice)
- 8-10 chocolate chips
Directions

To a small bowl add the peanut butter, sweetener, cocoa powder, protein powder, and milk. Stil until combined.

Place a sheet of parchment paper on a plate. Add the cookie dough to the parchment paper in a circle shape. Add chocolate chips to the top.

Microwave for 50 seconds.

More tips for making this chocolate protein cookie recipe:
- I added some monk fruit sweetener in mine, but you can use honey or even maple syrup to taste. I suggest taking a little taste of your batter and seeing if it’s sweet enough before it goes into the microwave!
- Use your favorite peanut butter or almond butter if you’d like.
- What type of protein powder is best? Honestly, just use your favorite. It can be vanilla flavor, chocolate, or unflavored like I used. We have tested all of them and they will work out. If you’d like an affordable suggestion this Gainful brand I found at Target.com is great.
- Be sure to line your plate with parchment paper so it doesn’t stick.
Who could resist a simple 1-minute cookie? Not me!
This is such a low-effort idea and one to keep in mind for sweet cravings on a whim. I am looking forward to experimenting with other fun add-ins too! I will admit this cookie idea is tastier than any single-serve microwave mug cake I have tried. They can sometimes turn out super eggy-tasting to me.

I just made these with my daughter. We used almond butter instead of peanut butter and omit the chocolate chips and it was still tasty.
