There are a few recipes I use on a weekly basis to save myself time and money! What I love is that there fairly basic and simple, which makes them easy to alter depending upon your taste preference and any other optional items you want to add.

Oatmeal is one of my favorite things to eat for Breakfast in the morning. Not only is it healthy, but if made ahead it can be prepared in a few minutes. The other great part is that Oatmeal can be flavored and topped with whatever you like. Sometimes I throw in fruit, raisins or nuts, really whatever I have on hand.

Basic Stove Top Oatmeal Recipe
INGREDIENTS
2 egg, beaten
3-3/4 cup milk
1/4-1/2 cup packed brown sugar
(depending upon how sweet you like it)
2 cups rolled oats

In a saucepan over medium heat, whisk together the egg, milk and brown sugar. Mix in the oats. When the oatmeal begins to boil, cook and stir until thick. Remove from the heat, and serve. Add whatever toppings you like. I always cook extra oatmeal for the week. In the morning, just reheat in the microwave with a little milk and butter. Yum!

Muffins are another great staple in our house that we always have on hand. They are perfect for those breakfasts on the run and even as a snack mid-day. My hubby always takes a few to work and that saves us a lot of money… no more vending machine snacks!:) I always keep a batch in the freezer too! Here’s the Basic whole wheat muffin recipe I use quite often. I added bananas and strawberries, but you can change it up and add whatever you like!

Whole Wheat Muffins

INGREDIENTS
2 eggs
1/2 cup yogurt (I used strawberry)
1/4 cup applesauce or vegetable oil
3/4 cup packed brown sugar
1 teaspoon vanilla extract
3 bananas, mashed
2 cups whole wheat flour
1 teaspoon baking soda
1/2 tablespoon ground cinnamon
1/4 teaspoon nutmeg
1 cup frozen or fresh strawberries mashed

Preheat the oven to 375 degrees. Grease 12 large muffin cups, or line with paper liners. In a large bowl, whisk together the eggs, applesauce/oil, yogurt, brown sugar, vanilla and bananas. Combine the flour, baking soda, cinnamon and nutmeg; Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Spoon batter into muffin cups until completely filled. Bake for 20-25 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing.

    one of my kids favorite healthy and super simple treats
    Pumpkin poop (they love the name to)
    combine one can of pumpkin with one cakemix (we prefer chocklate)spoon in even lumps on cookie sheet and bake 20 min in 400 degree oven

    Those muffins look so yummy! I love that they use applesauce and yogurt. I am definately going to try them – once strawberries are in season and are cheaper!
