Easy Slow Cooker Pot Roast

Ingredients

  • 2-3 pound pot roast
  • 1 packet of onion soup mix
  • 1 can stewed tomatoes
  • 2 carrots peeled and chopped
  • 6 small potatoes chopped ( I like red and yellow potatoes)
  • 1/2 cup water

Directions

Brown the outside of the roast with a little oil in a pan on the stove for about 5 minutes.

Mix the tomatoes, water, and onion soup mix and pour over roast, carrots, and potatoes.

Cook on low for about 8-10 hours until tender.

One of the very first recipes I learned to make early in my marriage was a simple slow cooker pot roast. Even to this day, it’s my hubby’s favorite and he still gets really impressed (shhh – don’t tell him it’s so easy to make)! This is how my mom makes pot roast; and on a chilly day, it’s so comforting!

Hip Tip – If you’re thinking of making your own onion soup mix, here is a recipe to do just that!

      I don’t use the tomatoes but I do use a can of cream of mushroom and I use the Beefy onion (vs. the onion). It definitely makes a nice gravy without having to mix with flour or corn starch!

      When do you put the COM Soup in? At the beginning or closer to the end of cooking.

    You lost me at having to brown the roast…If I have to pre-cook a slow cooker item in the morning, it is too complicated for me. There are gret receipes out there that don’t require that extra step (and extra dishes, clean up, etc). Just Google it.

      I’m the same way, I like my slow-cooker recipes to be one step. BUT… it really makes a difference when you brown the roast first. That sear brings a flavor that no amount of slow cooking can add.

    This sounds great! I found a recipe on Pinterest that we love for sliced need sandwiches. Place meat in crock pot. Put one stick of butter, one package aus jus mix, one package hidden valley mix and 6 pepperchinis. Cook on low for 8 hours. I like to let the juice chill am separate the fat off. Slice meet and serve warm with the juice on hoagie rolls. I have some in the crock pot now!

    I have made this recipe before to a T and find that it is just too bland. Any suggestions??

      Maria, try adding some beef bouillon cubes and take pieces of garlic and poke them in holes all over the roast….it gives the meat a great flavor.

      We used the same recipe as above but I could only find italian stewed tomatoes with garlic & italian herbs and ours tasted wonderful.

    My favorite crock pot recipe right now; I’ve made it for a couple of years now. I love how easy it is to put together. I have one of those crock pots that you can brown right in the pan so its an easy step for me. So delicious with golden potatoes, they cook up easily.

    Looks like this recipe has been online for decade.
    Well, it was worth the wait. FANTASTIC!
    Our roast was twice the size so we doubled everything. Glad we have a huge slow cooker. We cooked it for 8 hours (5 on high and 3 on low). We likely had too much in the cooker so it took everything longer to get hot, but we anticipated this which was good.
    Here are the changes we made for personal taste….
    – broth instead of water
    – an onion (cut into quarters) just because we like onions
    – few dashes Magi and a packet of Oxo powder at the end for extra zing.
