How To Make Meatloaf AND Mashed Potatoes in UNDER 1-Hour Using Your Instant Pot

Instant Pot Meatloaf & Mashed Potatoes

yield: 6 SERVINGS

Ingredients

For the Meatloaf:

  • 2 pounds ground beef
  • 1 egg
  • 1 cup Italian breadcrumbs
  • 1/3 cup ketchup or BBQ sauce
  • splash of Worcestershire
  • 2 tablespoons minced garlic, fresh
  • 2 tablespoons dried minced onion or 1/2 cup finely minced onion
  • 2 teaspoons dried parsley
  • extra ketchup or BBQ sauce for topping, if desired

For the Potatoes:

  • 2 lbs. potatoes, chopped (I used Yukon Gold potatoes with skins left on)
  • 1/2 cup half and half cream
  • 1/2 cup or more chicken broth
  • 2 tablespoons butter
  • Salt & Pepper to taste

Directions

Mix ingredients for meatloaf with a potato masher in a large bowl.

Transfer to a disposable foil loaf pan or make your own loaf shaped pan out of tin foil.

Cut potatoes into smaller pieces and place at the bottom of Instant Pot. Arranged them in an even layer. Add 1 cup broth or water over potatoes.

Place the rack that comes with your Instant Pot over potatoes and set the meatloaf on top. (I had to squish the pan a little for it to fit, but that’s fine.) The rack will make it easy for you to take loaf out when it’s done.

Secure lid and set at Manual (high pressure) cook time to 25 minutes. Make sure steam release is closed.

When finished, do a quick release on the pressure.

Top with a little additional ketchup and place under the oven’s broiler for a few minutes to caramelize. (Optional, but yummy step!)

Meanwhile to make potatoes, mash them in the Instant Pot with half & half, broth, butter, salt, and pepper until creamy.

Need an excellent meal idea for your Instant Pot?🍴

Meatloaf and mashed potatoes has always been one of my family’s favorite combos and this is a genius way to cook both foods together at the same time using an Instant Pot Pressure Cooker. Once the cook time is over, simply remove the loaf pan and finish the mashed potatoes in the same pot! Awesome, right?

If you happen to already have a favorite meatloaf recipe then feel free to use it, or use the simple one I usually make.

This is such a yummy homemade meal idea that takes under an hour to prepare!

Here's how to make Instant Pot Meatloaf and Mashed Potatoes together as a comforting and convenient one pot meal the entire family will love!

    Hello, I made this tonight and followed the recipe exactly. The meat was very pink. I cooked an additional 7 min, 7 more min, then 9 more min and it still had some pink. What did I do wrong?? Also, are you supposed to drain the potatoes before mashing??? It was good just took longer then I planned.

      I had the same problem with the meatloaf being rare. The internal temperature was only 110 degrees F after 25 minutes in the IP. I ended up cooking it in the oven at 425 degrees F for 20 more minutes. I also must not have used enough potatoes because they turned out really runny.

    My Instapot came with a steamer rack without handles, not like the one you have pictured.Not sure if that matters? Is the rack just sitting on the cut up potatoes?

    This was delicious! Made it tonight in my 6 quart IP and set the time for 30 minutes. I did let it NR for 7 minutes and then broiled it for another 3-4 minutes while I mashed the potatoes and set the table. Definitely will make this again! Thanks for sharing!

      My research online suggests a similar cook time, however you may want to soak breadcrumbs in milk, or add a little moisture in extra sauce as turkey could be a drier meat. Hope that helps 👍

    *extremely* disappointed in your recipe. 25 minutes high pressure meatloaf still not cooked; more than 1 cup of broth is needed for the potatoes. I’ve been cooking for over two hours. 🙄

    I made this last night with 2.5lbs of meat and it cooked perfectly. I used aluminum foil instead of a disposable tin, since I didn’t have one and the meat spread out a bit, so that may help with the pink issue I am reading about. However, my husband wants me to try the tin next time since tomato based products and aluminum foil cooked together have been proven to cause cancer. sigh…everything causes cancer now-a-days. My only dislike of the recipe were the chicken stock in the potatoes. To me, it made it taste funny. Then again, it could have been the fumes from the meat or the foil. Who knows. The meatloaf had an amazing flavor and I also added green and yellow bell peppers. Thanks for the recipe, I’ll definitely be making this again!

    May I ask should cook longer cause my husband loves boiled eggs in his meatloaf..ugh so one side eggs other side no eggs..lol? And actually how much does the potatoes feed 4-6 or is that the whole meal husband big eater…lol?

      I would say the entire meal feeds 4-6 depending on how much your family eats. Maybe 4 if your hubby is a big eater. Not sure what you’re asking on the egg question?

    I made this tonight and it came out great. First, I did use 2lbs of meat and 3 large russet potatoes. I did set the manual time for 25 minutes; however, I did let it sit for 15 minutes after and then released pressure. I used 1 cup of water and it was perfect. Literally could of used a fork to mash them and I only a small amount of cream and butter but they were not runny at all. Hope this helps😃

      cake pan worked out PERFECTLY. 25 minutes was perfect for 1lb of meat. placed under broiler with extra sauce for a few minutes. husband and kids loved it!

      Yes anything like Pirex cookware should be fine. I read online to add 5 minutes cook time. Hope that helps!

    Made this tonight for dinner. It was really good. I made it with 1 pound of bison and 1 pound of turkey. I did not have an egg so I substituted it with applesauce. I also read through the reviews and set my IP for 30 minutes. Will definitely make again.
