Banana Oatmeal Breakfast Cookies

Mix oats and mashed banana together well.

Stir in peanut butter and any other add-ins.

On a parchment paper covered or non- stick baking sheet, scoop out about 10-12 cookies.

Flatten cookies a little, and bake in the oven at 350 degrees for about 11-12 minutes until slightly browned. Let cool, and serve.

Store any leftovers in an airtight container.

Need a quick make-ahead breakfast idea?

If your mornings will soon be filled with busy back to school routines, consider baking these portable Oatmeal Banana Breakfast Cookies. They are super simple with just two main ingredients and can be made with so many different add-ins to customize for your family’s taste.

For these cookies I added peanut butter and sliced almonds, but you could add raisins, cinnamon, coconut flakes, chocolate chips, walnuts, berries, and any other items you’d normally add to oatmeal.

TIP – For sweetness, make sure to use over-ripe bananas.

    This is the dish that made me discover my daughter’s peanut allergies. I was holding her when she was a few months old , took a bite of the cookie, had some crumbs fall down. Didn’t think much of it until diaper changing time. Apparently a crumb fell into her onesie…when i lifted her shirt to change her diaper, she was all red and hive-y. 👎 she’s almost 3 and haven’t made these ever since.

    I added some craisins, chia seeds and two fun size packs of m&ms and they taste satisfying and really good. Just had my four year old taste and he says it’s yummy👍👍

    Skipped peanut butter, added raisins and some m&ms. My older kiddo liked it and younger one didn’t but it’s because my younger one doesn’t like oatmeal yet. I really liked it and was soooo simple to make. Thx so much!

    Just made these about an hour ago with just the oats, banana and natural pb to see what they were like. My 8 yr old said they were nasty and would not take a 2nd bite. I ate 2 so far lol and liked them because I am a clean eater and used to healthy non sweet things but no one would eat these but me in my house. I’m sure if I added m&ms or something it would change that but then they are no longer healthy. So yes if you don’t enjoy healthy food it won’t work for you…now on to #3! Lol
