Are these ok to freeze?
They freeze pretty well – not quite as good as normal baked goods, but they are fine. You just have to let them thaw at room temp individually OR microwave gently on low heat. They seem to release a lot of moisture when they thaw so I recommend thawing one at a time/as needed and blot with a paper towel before filling/topping. Sometimes they do stick together when frozen and are a little tricky to separate. Also, like any bread product they get SUPER hard if you microwave them too long to defrost and then they have the texture of cardboard. Hope that helps!!
