Low Carb Keto Parmesan Meatballs

Ingredients

  • 1.5 pounds ground beef
  • 1/2 a fresh onion, chopped
  • 3 tablespoons fresh chopped parsley
  • 3/4 cup grated Parmigiano-Reggiano cheese
  • 1/2 cup almond flour
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon dried Oregano
  • 1/2 cup warm water

Directions

Preheat the oven to 350 degrees.

In a mixing bowl, combine ground meat and the rest of the listed ingredients. (I like to use a potato masher.)

Roll two inch sized meatballs and place them on a baking pan. (Should yield about 15 meatballs.)

Bake in the oven at 350 degrees for 20 minutes.

Take meatballs out of the oven and spoon about a tablespoon of homemade Keto Marinara Sauce, or a sugar-free canned sauceΒ over the meatballs. Sprinkle a small amount of mozzarella cheese over each meatball.

Put meatballs back in the oven for 15-20 minutes to melt cheese.

Serve over roasted spaghetti squash.

Feel free to improvise the recipe and season them as desired.

I think fresh basil would be nice to use instead of parsley as well.

We doubled this Keto Meatballs recipe to feed our group on the Hip2Save team retreat recently, and it really did turn out to be a delicious meal idea to feed a crowd. Melting the cheese and sauce on the meatballs before serving makes it over the top delicious!

This is the recipe we used for the Keto Marinara sauce and we also served baked spaghetti squash for people following a Keto diet, along with regular noodles for those not. We served this all with a fresh salad and everyone was full and happy! 😋

      I just skip the almond flour and use just parmesan cheese when I make mine. I have always made them for my GF daughter and now I eat them that way being Keto. And actually it’s cheaper to skip the almond flour too.

    This was delicious. I made two matches. I made one batch with small meatballs and one batch with extra large meatballs. Both were equally delicious. I served these at a dinner party last night – 4 non Keto eaters. It was met with a resounding DELICIOUS!
