Make & bake Fathead pizza crust.

In a small saucepan on the stove, brown the butter and garlic for a couple minutes, while stirring on medium heat.

Whisk in cream and heat until almost boiling.

Reduce heat and whisk in Xanthan Gum. Stir until thickened. Add salt, pepper, and nutmeg.

Pour cream sauce over the top of pizza crust.

Top pizza with chicken, spinach, and cheeses.

Bake in the oven at 400 degrees for 5-10 minutes until cheese is melted.

THIS IS SO GOOD!

I think pizza with white sauce is a nice change of pace from tomato sauce. My family loved it! I always appreciate that this a crust you can pick up, and it truly tastes like yummy pizza that happens to be low carb!

    I just started the Keto diet this week and I’m pretty much a vegetarian. It’s been super easy so far and I have tons of energy. I am really strict on the carbs right now since I’m doing it for weight loss, but just in 5 days everyone sees a huge difference in my appearance. My stomach is almost completely gone woohoo.

    Thank you Lina! I had pretty much everything on hand and made one for lunch. I was able to use up leftover baked chicken & sauteed mushrooms along with the spinach for the topping. What I didn’t have was the almond meal and really didn’t want to go to the store. But I had a bulk bag of whole almonds in my pantry and hit up google to see if I could make it myself and score! Most sites said to use a high powered blender like a vitamix, but I don’t have one. So I used my coffee grinder and it worked just fine! Easy peasy!! I also didn’t have zanthum gum, so I used cornstarch to thicken the white sauce. It was awesome.

        I made this again yesterday, as my husband was off. he was hounding me the whole time I was making it, so I forgot the egg and I think the crust turned out much better! I love him, but when his off days are during the wk, he can be a total pain. Couldn’t see how the pizza was going to be enough for the both of us. I told him trust me. When I made it last wk, the oldest scarfed my leftovers when he came home from soccer practice. Sure enough after 2 pieces, he was like Wow, I’m actually full. I said see. It’s not like regular pizza, where it just seems your stomach has turned into a bottomless pit and we overindulge. I also found that it was easier to roll out the dough on my silpat mat first, then transfer the entire thing to my baking sheet. I have a long rolling pin and with the lip of the pan, it was hard to roll the first time, I used my hands to smoosh the dough into shape.

      Mel, I’m glad you asked about the zanthum gum, because that is not something I keep on hand but I do keep cornstarch and I have been wondering what I can do with my almond meal I have in the fridge, I make my own milk and then dry out the meal to use for bread and such, so this would be a wonderful addition to my diet, I don’t even care to eat regular pizza anymore so I know now when I have a craving I have an option, thanks Lina!!!!

    This is what I need! I’ve been low carb for 3 years now, after I was prediabetic while pregnant with my third child. In the past three years I’ve lost 60 pounds ad managed to get all my glucose numbers back into normal range, but I’ve been craving the old types of foods lately. This pizza recipe is exactly what I needed to satisfy those cravings! Another great recipe is a cauliflower waffle recipe, using riced cauliflower, eggs, mozzerella and parm cheese. Toasted in a waffle maker it’s divine! thank you for this excellent recipe to help keep my low carb diet fresh with new ideas!! Very much appreciated!

    I made this last night for my Birthday dinner – it was to die for – and I have 2 more meals from it as it is very filling. I didn’t have xanthum gum (well I do, but couldn’t find it) I added a little more cheese and just cooked longer and my sauce got thicker and was perfect. I will make this again and again!
