These Baked Oatmeal Berry Cups Get an A+ for Breakfast
Need an easy back to school breakfast idea?
Try baking these easy and delicious baked oatmeal cups! It’s basically everything you love in your favorite bowl of oatmeal, all baked in a convenient muffin tin! Such a great idea for a quick weekday morning grab and go breakfast.

I added some fresh berries and dried cranberries for my add-ins, but you can definitely customize with other berries, dried fruit, nuts, etc. I had agave on hand for a sweetener, but you can use honey, brown sugar, or your sweetener of choice (these are not very sweet tasting so keep that in mind if more of a sweeter muffin is desired). If almond milk is an issue, use any desired milk.
Easy process for busy people!
I love that this recipe is easy to mix together and doesn’t take a ton of time. To get that breadlike texture, processing some of the oats into a flour using a blender or food processor is an extra step, but that extra step is worth it!
Baked Berry Oatmeal Cups

Ingredients
Wet Ingredients:
- 1 ripe banana
- 1 teaspoon vanilla extract
- 2 eggs
- 1/4 cup agave sweetener
- 1/2 cup almond milk
- 2 tablespoons coconut oil, melted
Dry Ingredients::
- 2 cups rolled oats
- 1/2 cup rolled oats (blended into powder)
- 1 teaspoon baking powder
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 1/4 cup dried cranberries
- pinch of salt
Directions

Preheat oven to 350 degrees. Whisk together banana, vanilla, egg, agave, milk, and oil. Set aside.

Using a blender or food processor, process 1/2 cup of rolled oats into a flour consistency.

Mix the oat flour you just made with the other 2 cups of rolled oats, baking powder, and salt, in a separate bowl.

Add wet ingredients to dry ingredients and combine well.

Spoon mixture into a GREASED muffin tin. Bake at 350 for around 18-20 minutes. (Recipe made 15 muffins for me.)

I think baked oatmeal cups would make a great breakfast or a lunch snack in the lunch box for school! Just keep them covered in the fridge and take out as needed. They should stay for about five days in the fridge. Today I warmed one up in the microwave for breakfast and it was YUM!

Can 2 tablespoons vegetable oil be substituted for coconut oil?
I would assume so, yes. Also, I often sub applesauce for the oil in baked goods with no difference in the end result.

Lina, quick question. The ingredient list says “1/2 cup rolled oats (blended into powder)”. Do you measure 1/2 cup then blend, or do you need a total amount of 1/2 cup oats blended?
I measured a 1/2 cup then blended. It was about the same after blending. Hope that helps! Thanks
