Don’t Cry Over Costco Sheet Cake – This Reader Made Her Own!
This Hip Tip is a sweet one!
As you may have seen in our previous post, Costco is no longer selling its amazing Half Sheet Cakes, and we are so bummed!
However, Hip2Save reader, Ellen, has a solution! She purchased a Wilton 11″x15″ sheet cake pan, cardboard containers, and a 13-pound container of Sam’s vanilla whipped icing!
For a 40th Anniversary Party, she decorated one with sprinkles, one with fresh strawberries, had Walmart make an edible image for one, and the fourth sheet cake was made dairy and gluten-free.
They were such a big hit, everyone loved them and asked where I bought them! Since then, the pans have been able to be reused for birthdays, graduation, and holidays! Plus, sometimes I will just leave the cake in the pan and ice it and decorate it! I hope this “hip” idea can help save some other fellow hipsters as much as it has saved me! – Ellen

The cheesecake type middle filling is the reason I love the Costco cakes! If I could figure out how to make that I would make my own!
I make mock filling out of jello brand vanilla(or any flavor) pudding mix with heavy whipping cream, mixed very well, then thin it down with milk to the consistency you like…very rich but can make thick layers. I think I used the bigger box 3 cup box last time, 16 Oz heavy cream, 1 cup milk.
…and jello does have a cheesecake flavored pudding mix that is great too.

How many boxes of cake mix would it take to make a cake this size?
I have a half sheet that I make cakes with for all of my kids~ 3 boxes will be about inch and a half thick, 4 boxes will be about 2 inches thick.

As exciting as this is (and they turned out great)…please be careful having large gatherings when they is still no cure for COVID. We know six members of the same family (all adults living in different homes) all contracted COVID died after a huge family party. Six others were hospitalized and now in rehab. Please be careful still. 🙁
It’s heartbreaking we will have to spend the rest of our lives away from loved ones…

I was afraid I was the only one concerned about any gathering right now that required 4 sheet cakes
It is such an interesting virus. We had some friends who attended a Vow renewal a few weeks ago and about 10 people tested positive after the event. Eight out of the 10 didn’t have ANY syptoms….i they only tested after they found out someone tested positive. Two of them experienced very mild symptoms and one was even diabetic with many health issues.
I am sorry about your friends. We had my parent’s 40th anniversary party was last year.
There’s no way I’m making a cake that size! And, even if I did, with my baking skills it would be nowhere near as yummy as Costco LOL!
Does the icing taste the same?
Never mind, I just saw that frosting they recommend costs $21!!! More than the cake, I’m just going to have to wait for Costco 🙁
I bought a bucket of Sam’s Club whipped icing directly from their bakery last year for my parents anniversary party and it was the same icing that they used on their sheet cakes so it was super good. For smaller parties when I only make 1 sheet cake (I use 4 boxes of cake mix) I just buy the small 16 oz containers of icing from the grocery store and use 2-4 containers depending on if I am doing the sides or just the top. I hadn’t even thought about putting a filling in the inside that is an awesome idea!
I don’t know what Costco’s frosting tastes like but homemade frosting is pretty simple.
My favorite recipe is for chocolate cream cheese buttercream. The cream cheese cuts a bit of the super sugary sweetness and everything’s better with chocolate! 🙂
But I’ve even made gluten and casien free icing using a butter substitute, almond milk, powdered sugar and gluten free vanilla extract that came out pretty well and I’m definitely not an expert in the kitchen.
I have one of those pans. They also work great for dinners when a 9×13 pan just isn’t big enough.
I have one of those cake pans. When not being used for baking, my kids use it for building legos. It great to contain all the little pieces of legos especially for a big set that they don’t finish in one sitting. It’s used far more for legos than baking because we don’t often need a cake pan that big! 🙂

Are box cake mixes as good as the Costco sheet cakes? What was used? There’s no info here about the cake (flavor, variety, recipe).
You can use whatever you like!
