A New York-style bagel shop by our house serves up a coffee cake like this with a thick crumb topping my family loves. This delclious blueberry crumb cake certainly reminds me of it and using the yellow cake mix makes it easy to bake at home.
The result is a soft yet rich blueberry cake with a sweet buttery cinnamon and sugar crumb topping. Biting into this combo is heavenly. This recipe has an entire pound of butter, but trust me it’s well worth the calorie splurge.

Blueberry Crumb Cake Using a Cake Mix

Ingredients
for the cake:
- 15.25 oz. boxed yellow cake mix
- 1 cup water
- 3 eggs
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
for the crumb topping:
- 2/3 cups granulated sugar
- 2/3 cups brown sugar
- 2 teaspoons ground cinnamon
- 1 1/2 cups butter (3 sticks!), melted, yet cooled
- 3 1/2 cups flour

Preheat the oven to 350 degrees. Grease a 9x13 pan.

Combine the cake mix, water, eggs, butter, and vanilla extract, in a large mixing bowl, using a hand mixer until smooth and incorporated.

Fold in the fresh blueberries. Pour the cake batter into the pan.

In a mixing bowl combine the crumb coating ingredients

Bake for 30-35 minutes. You'll know it's done when a toothpick inserted in the middle comes back clean.
More tips for baking this blueberry crumb cake recipe:
- A cup of fresh blueberries was actually pretty mellow, so if you’d like a stronger berry taste feel free to increase the amount!
- A cup of chopped pecans would be a great addition to the crumb topping if you’d like to include nuts.
- This could be made ahead of time and stored covered in the fridge for up to 3 days. I like this coffee cake chilled like our bagel place serves, but you could warm it up a bit before serving.
