This Jiffy Corn Casserole Recipe is Perfect for Thanksgiving (Easy Side Dish Idea!)
Make sure to clear a spot on your holiday dinner plate for a slice of this sweet and savory corn casserole recipe!
Everybody loves this 6-ingredient side dish, especially with turkey dinner!
Some call it cornbread pudding or cornbread casserole, but it sure is a quick recipe with just a few simple pantry ingredients that easily bakes up into something special and delicious. It’s a perfect one to consider sharing during the holidays or year-round, honestly!
Corn casserole is an old-fashioned sweet and savory dish and is a combo of Jiffy corn muffin mix with creamed and whole-kernel corn. This along with butter and sour cream make a dreamy casserole that you will want to dive into! I love how it comes out buttery, rich, and super creamy instead of plain cornbread.
If you are like me and love the holiday side dishes maybe even more than the main dish, this is for you! Plus this is a pretty economical recipe as it costs less than $10 to make in groceries.
We tend to stick to the original recipe from JiffyMix.com except for using the normal 14-15 oz cans of corn, instead of the 8 oz. cans it usually calls for.
Jiffy Corn Casserole Recipe
yield: 6 SERVINGS
prep time: 10 MINUTES
cook time: 35 MINUTES
total time: 45 MINUTES
Sweet and savory corn casserole is made with canned corn and Jiffy corn muffin mix as an easy side dish.
Ingredients
- 2 eggs
- 1/2 cup butter or margarine, melted
- 15.25 oz. can of whole kernel sweet corn, drained
- 14.75 oz. can of creamed corn
- 8 oz. sour cream
- 8.5 oz. Jiffy corn muffin mix
Directions
1
Preheat the oven to 375 degrees. Grease a 9x9 casserole dish.
2
In a mixing bowl add the two eggs and whisk them. Add the remaining ingredients and stir the batter until combined.
3
Pour the mixture into the pan, and level. Bake for 30-35 minutes until the middle is firm and the edges are browned. Serve warm.
Extra tips for making this easy corn casserole recipe:
- This idea serves 6-9 people depending on how big you slice it, but can easily be doubled for a larger crowd in a 9×13 casserole dish. This is what we sometimes do to ensure leftovers. The baking time may be a few minutes longer. You’ll know it’s done when the middle is set and the sides are browned.
- I have not personally tested it, but have read you can compile all of these ingredients and make the casserole in a Crock-Pot instead of the oven. Try cooking on high for 2-3 hours until cooked through.
- Feel free to mix things up and use various add-ins. Some people add cheddar cheese to the top and mix in cooked bacon pieces, chopped jalapeños, or green chiles. This is super versatile and easy to cater to taste.
Bring on the buttery Jiffy corn casserole!
This is my husband’s favorite Thanksgiving side dish his family always made growing up. I wasn’t really familiar with it until my mom-in-law made it and to him, it’s not the holidays without it.

This recipe is a staple for our family!
We love this for Thanksgiving! I sprinkle cheese on top when it’s almost done in the oven. 😋😋😋
That sounds fab! Great idea.👏
This looks so yummy and easy enough for me? Am wondering how to turn into a breakfast casserole? TIA!
Add cooked breakfast sausage.
Thanks!
this one is a good one!
I make a similar one. Mine uses two regular size cans of cream corn instead of one cream and one regular. And no sour cream. 1/2 cup water instead. We love corn pudding over here!
This also makes a great base for tamale pie. Poke holes, pour over broth or enchilada sauce, pile on your meat and top with cheese. Brown off in oven.
Tamale pie sounds delicious! Thanks a bunch for sharing this suggestion, Ihearthip! 💕
I made this last year & I’m making this again this year.! Thank you!
Oh yay! That’s so great. Thanks for sharing Regina!
I love this recipe. I like to mix it up by replacing the canned corn with a grated yellow squash. It’s so yummy!
Oh… that sounds great! Thanks for sharing Kimberly!
I make this and add sugar to it. About 1/4. More like dessert. So yummy!
Oh YUM! Thanks for letting us know how you sweeten up this recipe a bit to enjoy!
when I make regular cornbread, I fry up some slices onions in butter and put them on the bottom. then after it’s baked, flip up over and it’s like an upside down cake. it’s so good too.
Yum, that sounds amazing! 😍 What a creative twist – like an upside-down cornbread cake! I bet those buttery fried onions add some great flavor. Thanks a bunch for sharing this delicious tip! 🍞🧅💛
We’ve been making this for years and it’s a hit at church; we double the recipe for a roaster pan, we also don’t drain the corn; we have this every Thanksgiving as well and people always ask for the recipe.
Yay! So glad to hear it’s been a hit at church, Heather! Love that it’s become a Thanksgiving tradition everyone looks forward to! Thanks for sharing your tip about not draining the corn too! ❣️
