Delicious Coconut Milk Coffee Creamer Recipe (Non-Dairy & Paleo-Friendly)
So, I am excited to finally share this non-dairy, paleo-friendly coffee creamer recipe with you. For the past week, I have been concocting various non-dairy creamer recipes… most have honestly not been edible. I guess I may be a little on the picky side when it comes to creamer. I wanted the non-dairy creamer I created to have the same consistency in my coffee that real creamer does… AND I wanted to really be able to enjoy my coffee again. Well, after a week of experimenting, I think I finally found a winner! 🙂
Please note that this recipe does contain a raw egg, so proceed at your own risk. You can try the recipe without the egg, however, if you are wanting the consistency to look more like “cream”, the egg really helps with that. Lecithin in the egg also keeps the coconut oil from separating and floating on the top of your coffee. Here’s an interesting article regarding the safety of eating raw eggs.
Coconut Milk Coffee Creamer
yield: 15 SERVINGS
Ingredients
- 1 can of Coconut Milk, 13.5oz
- 2 tablespoon of Coconut Oil (melted)
- 1 egg (preferably organic)
- 1 teaspoon of Vanilla Extract
- Either 1 teaspoon (or more) liquid Stevia or 1 tablespoon honey
Optional to Create Flavored Creamer:
- Cinnamon
- Almond extract (or other flavored extracts)
- Cacao Powder
- Pumpkin Pie Spice with a little canned pumpkin (haven’t tried this yet, but sounds yummy!)
Directions

Put all ingredients in a blender or Vitamix.

Blend until you have a nice cream consistency.

You can then store in the fridge.

The creamer will also thicken up, as you can see from the pic below.
I also made a variation with unsweetened almond milk (instead of the coconut milk). It did not have even close to the creamy consistency of the coconut milk mixture… it was a lot thinner. However, the almond milk concoction made for a delicious addition to a bowl filled with nuts and blueberries! Yum!

Most definitely! 🙂 You can get your protein from tons of other sources… eggs, chicken, turkey, beef and the list goes on.

Wendy, I am on day 11 and down 9 lbs! All of my cravings for “bad” foods are gone, except MAN do I miss my Starbucks fix. I can’t get used to black coffee, and have been searching for any alternative. Wondering about Acidophilus milk as well. Going to try this creamer this weekend, and can’t wait!

Collin, have you tried to cook the mixture? that would take away any fears from the raw egg…
when you make an ice cream base, its cream/milk and sugar heated, then you slowly add the heated cream into egg yolks while mixing, put the mix back on the heat, and heat to 140, which is the temperature that eggs need to be cooked to per food safety regulations…
i imagine that you could do the same kind of thing with it- heat the coconut milk/oil, slowly add it to the egg while beating it with a whisk, put it back on the heat, and heat to 140. then add the flavors.
oh, also collin- you should just be using the egg yolk. the white of the egg doesnt have any lecithin in it.

This sounds great! I have an possible option for those concerned with the raw egg..mind you I have not tried THIS recipe with this…BUT… You can get an egg consistency by taking 1/4cup of water and a teaspoon of flax seeds(not oil, the actual seeds, I fin them at Dollar tree sometimes,when I remember to look, for a pound of them) bring both to a simmer-low boil for a couple minutes stirring constantly, as it cools it kinda Gels up a bit, you can strain out the seeds for a recipe like this but in baking and such you could leave them in 🙂
I have a daughter with an egg allergy, so we use this regularly 🙂
What about xanthan gum to keep it all from separating?

You could use pasturized eggs (like egg beaters in the ref. section) That way you could avoid the food safe problems.
The major issue and reason there are problems with raw eggs is that they come from unhealthy chickens in confined quarters. These chickens most often do NOT eat a vegetarian diet (I’ll let you guess what they might be eating), and they are often so sick they can hardly walk. I don’t know about anyone else, but I certainly would not eat the eggs from a chicken in this condition. The problem is…if you’re purchasing conventional eggs from a grocery store, there’s a decent chance that’s just what you’re putting in your body!
In order to almost completely eliminate any fear of consuming raw eggs (I know folks who eat raw eggs on a daily basis and have never had a problem), follow these recommendations:
*Consume eggs from healthy chickens who have a natural diet, have access to free range, and have NOT been treated with hormones/antibiotics.
*Consume eggs from LOCAL chickens. Ideally you should know the farmer you’re purchasing eggs from or at least go check out the farm before regularly purchasing.
*If any concern remains, you may wash the outside of the egg before cracking and consuming.
i do not condone the way we treat animals for slaughter in this country but I fear we have gone to far to ever really change it back to a more natural way…however I do buy whatever normal grocery store egg is cheapest, and I eat raw cookie dough all the time and never get sick from it..my grandma freaks out like I’m going to die or become a zombie:)
I always look for “Certified Humane” and “Vegetarian Feed” as well as “Free Range” labels on my eggs. My father in law was a truck driver, and sometimes had to haul egg laying chickens. He was so disgusted by the conditions — and this is a normal, hardworking, Nebraska guy.
Yeah that’s what I was going to recommend. I think also using really fresh eggs would help as well if you were planning on keeping it for a little while.
Or get organic eggs. Better yet, get your own chicken! Super-low maintenance. We had them my whole child hood!

I actually didn’t start eating this way for weight loss. I really am just at the point in my life where I want to know what is going into my body, so eating whole foods helps with that. I also have had issues with digestion and eating this Paleo way has really cleared up those problems. And I am just feeling so much better all around.. and have tons of energy!
Oh and to answer your question, I actually think I’ve gained a few pounds – but I am hoping that is muscle! 🙂
I just had my one year Paleo-versary and I have been using coconut milk in my coffee. I buy the Thai Kitchen brand and find it SUPER creamy. Sometimes there is even too much cream in the can and it’s so creamy I have to use a spoon. I actually use it as whipped cream for the kids. You might try a can of the Thai Kitchen organic and see if it is thick enough for you. If you don’t shake the can, when you take the top off, you can use a spoon to remove all the cream off the top (it’s about the consistency of butter). I save the water from the bottom of the can to use for making Paleo cookies or just for drinking.
The link provided regarding raw eggs (and raw milk) is sorely lacking real science. Food safety is not to be taken lightly even if the risk seems low. For examples visit https://www.marlerclark.com/. There are lots and lots of cases listed. FYI – there are pasteurized eggs on the market that you can use instead of raw eggs. Why take the risk!
I grew up on a dairy farm and drank raw milk all my life and raw eggs from our own hens. I am now a healthy, energetic, happy 47 year old witn absolutely no chronic disease and need absolutely no medications not ever OTC. I think in this country if you eat a diet of processed foods full of non nutritional chemicals, synthetic vitamins, genetically modified ingredients, pesticides, and BPA you are asking for ill health and when you have ill health perhaps you should not drink raw milk. As for me, I look like I am in the 20’s so I must be doing lots of things right. Don’t be a hater, be a lover 🙂
Have you seen “Forks Over Knives”? Great documentary, focusing on a plant-based diet. While the Paleo may initially be healthy, there are definite long term health risks. I recommend watching Forks Over Knives (on DVD or Netflix streaming), at least for comparison. A plant-based diet can reverse heart disease, cancer, and diabetes, whereas Paleo can contribute to those diseases if eaten long term. Too many animal products are not good!!! Sorry, but it’s proven.
Paeleo and low carb diets are really healthy ways of eating. It has actually been proven to lower the rate of bad cholesterol, heart disease, cancer and ESPECIALLY diabetes. (Carbs = sugar = bloodsugar spike) Watch Fatheat (Also on Netflix, or free on Hulu) Read the books by Gary Taubes. Go to the Weston A Price foundation and read their website. Humans are not vegetarians by nature, they are omnivores. And the only animals on this planet that are supposed to eat grains are birds.
I have seen “Forks Over Knives”. I have been a vegetarian ALL my life. However, as I have continued to dig deeper, I find that while one can lead a healthy life without animal products, my energy & overall health has dramatically improved since incorporating more animal proteins, mainly eggs and some chicken.
You’re correct in stating that animal proteins can cause serious disease and long-term illness IF you are considering the typical American consumption of meat. The average American consumes meat they purchase at the grocery store that is most likely from animals in CAFO arrangements. This meat is also full of hormones, antibiotics, not to mention the GMO grain that was fed to these animals. Add all of that together, and it’s no surprise Americans who eat these types of meats have all sorts of issues!
If meat is going to be consumed, it should be high-quality, locally raised, organic, free range, grassfed meat. This may seem like a lot of stipulations, but if you really start to think about it, this is how animals were raised and consumed for centuries before the industrial agricultural movement of our modern times. For example, the saturated fat content from typical grocery store meat can be almost 40% higher that that of the quality meat I referred to earlier.
In the end, everyone’s biochemistry is just a little bit different, and it’s up to each of us to really tune in to our bodies and adjust our eating habits based on how we respond to the different foods we consume. Some individuals will do better with more animal protein, some with less. Regardless, it’s important to consume high-quality foods, whether meat or plants.
too much animal protein is not good for your system..2 of my no carb diet friends have become severely ill years later…each person has to talk with their personal doctors and do what is right and balanced for them…not just follow the next fad
Friend, Paleo is not about animal products. It’s about eating what mother nature meant to be eaten by humans before they learned how to acquire it all in mass quantities and screw it all up (cook). It’s pretty much lots and lots of fruits, veggies and nuts and a little meat, fish or eggs. Balance! So sorry, but nobody has proven anything bad about Paleo Diet yet. 🙂

I just wanted to make a comment regarding the coconut oil. I keep seeing it everywhere as this “great” thing and especially being touted to help with weight loss. Coconut oil is one of the WORST oils you can put into your body! If you have a cholesterol problem, definitely steer clear of it! ANY oil is going to be about 45cal/tbsp so there isn’t one that’s lower calorie than the others, what you need to look at is the types of fat in the oil. Canola and olive oils are the best on many levels. Olive oil also contains a much higher amount of Omega-3s than any other oil. (I’m taking a nutrition class this semester. My professor spent an entire lecture on oils because she keeps seeing mis-information in the media and wanted to stress the importance of looking into what makes up the oils!)
This recipe only calls for 2tbsp of the coconut oil and as long as you’re not using tons of it, I don’t see an issue with it. Just wanted to mention that it’s not as “healthy” as it’s being advertised.
Coconut oil’s saturated fat is medium chained, unlike the saturated fat in animal products, thus making it a beneficial fat for consumption regardless of health status. Of course, health benefits of these products are only as good as the quality purchased. Therefore, we’re talking about organic, cold-pressed, extra virgin coconut oil. There is a multitude of research at our current disposal that completely obliterates the idea that consuming cholesterol actually affects our cholesterol numbers.
The single best thing that anyone with a health concern can do is to immediately eliminate sugar and processed foods from their diets. I assure you, coconut oil is not the enemy.
I’m sorry but your “professor” is dead wrong! There are good, and bad fats. This is a good fat! It will not make you fat! Your brain is mostly made of fat, if you deny your brain of good fats, you will become depressed. Please do more research on your own. Please read the book, “Nourishing Traditions” for starters.
I agree with Jenny and Niki. I’ve done a lot of research on coconut oil and the saturated fat is not the same as if you’re eating a big steak or burger.
Also oil is about 120 cal per tbsp not 45.
yea, coconut oil is very good for you. it is in a special class of saturated fats that are good for you.. i cant remember exactly why, but it has to do with the fact that it is a plant based fat, and not an animal or hydrogenated saturated fat… i fear that your nutrition teacher may be falling prey to the “mis-information” she is trying to fight.. my nutrition teacher (at the best culinary school in america, maybe in the world) taught very differently….
and yes, fat is good for you!
I have no qualms with eating raw eggs. I couldn’t fathom a world without cookie dough ;).
Have you tried agave for a sweetener? It’s way lower on the glycemic index than honey so it is better for your blood sugar levels. And when you don’t have a blood sugar crash, then you won’t crave more sugar as much. I use a lot of agave.
Great idea! I pretty much just use Stevia as my sweetener, but I will definitely have to try this with agave.
I haven’t tried the stevia extract yet. I tried the stevia in the raw, but it left that weird aftertaste that splenda has, so I don’t normally use it. Do those stevia drops do that?
I also like agave b/c it dissolves very easily in cold liquids (I’m guessing the stevia extract does too). But, that’s how I make my tea sweet without sweetening the whole batch.

I would definitely say the Stevia liquid drops are so much better than the powder. They leave way less of an aftertaste. I also think Stevia is a bit of an acquired taste. When I first put it in my coffee, I was not loving the taste… but now I can’t imagine my coffee without it! 🙂

Doesn’t the egg cook in the hot coffee, thus float to the top? I remember using egg protein powder in hot coffee, it cooked and chunked up, floating to the top…
Nope… I haven’t had any issues with that.
one egg dispersed in to the whole recipe of creamer and 100% egg protein powder, which is just egg with the moister taken out, is very different. if you just put a spoonful of beaten raw eggs into hot coffee, they would cook as well, but they wont in this recipe because they are in such a small percentage of the whole recipe… as in, you are “cutting” the eggs with other ingredients, so the eggs wont curdle because they are mixed in with other things.
I thought most coffee creamers sold (Coffemate etc) were actually non-dairy which is odd. Reading the labels one day…no creamer actually in there. Says non-dairy, lactose-free and only contains causein (a milk derivative)…read the labels, everyone…I was shocked.
Yeah, but coffee mate isn’t real food. Paleo isn’t just dairy-free – it’s non-pronounceable chemical free. It’s supposed to be real, whole foods as close to their natural state as possible.
Even though it says its lactose free.. the casein being a milk “derivative” is still dairy. Nestle (and other creamers that say that) can get away with it b/c they have convinced the government since its broken down it is no longer a milk product.
milk is milk is milk no matter how you break it down.

Anna I agree, I am Italian & I can’t give up my pasta & bread! I have really enjoyed Collin’s Paleo recipes & I am incorporating some of them into my diet. 🙂
I don’t think paleo is 100% for me (love dairy, grains, pasta too much to give up completely!), but I have incorporated some of the ideas into to the way I’m eating/cooking now. I’ve started by weeding out a lot of prepacked foods, and cooking more from scratch, adding more fruits & veggies to my family’s meals. I swapped out for brown rice & whole wheat pasta. I gave up soda and mainly drink unsweetened tea or green tea, water, milk. One of the things that helped me was to measure out portions to make sure I’m getting the proper serving size.. cereal is 3/4 or 1 cup depending on brand with 1/2 C milk (I would probably eat 2-3 servings before b/c I was just dumping cereal in a bowl!!)
I also started a small veggie garden so I can’t wait til those start producing! (so far I’ve planted basil, cilantro, cherry tomatoes, carrots, bell peppers & cucumbers.. everything but the cuke’s & peppers have sprouted.. I did start the cuke’s a week later)
What’s helped me stick to this “diet”, (which I don’t consider a diet and that’s probably why I failed when I -was- dieting, is more of a lifestyle change) is small changes and eating in moderation.
I love how some people use Collin’s recipe pages to preach about health and how everything she is doing is wrong and how their way is right. If you don’t like it, don’t make it- your health is your choice. I love reading the recipes, some of them I like, some not but it get really irritating having to read stuff from people preaching about health on this site of all places!

I am always looking for new ideas and healthy recipes. My husband thinks its funny how for 2 years I was the couponing/processed foods queen. I would feed us anything if I got it for free! Now that I’m getting older (nearing 30 🙂 ) I want to know exactly what is going into my body and my children’s bodies.
I have a question. Coffee is hot. Or at least I like it that way. Wouldn’t it boil the eggs in the creamer? I’ve been using almond milk in my coffee for a couple years by now (thanks for all the coupons, Collin! 🙂 ) and it’s been working for me. Creamy sounds nice but is it really that much better? I’ve used egg substitute in caesar dressing and it turned out well. But look at the ingredients, they add garlic powder and other savory flavorings which may affect your creamer. I haven’t searched it out but I imagine someone should carry undoctored egg substitute

We LOVE alternatives to just plain water when making rice! Using same ratio of liquid to rice, try coconut milk …we accidentally made a Thai dinner w/ a little jar of red curry on sale from Target over grilled chicken and the coconut (instead of water ) rice! Nuke a bag of mixed veggie like, snow peas, edamane, …yada yada yda…

Just FYI: If you are concerned about the egg issues, you may want to try powdered lecithin in place of the egg (since you want the lecithin for emulsion). I put the powdered lecithin in my smoothies in the morning. IT adds no taste, but a creaminess that would not be there. I don’t use dairy a lot in my smoothie, so this really helps & lecithin is so important for brain function. It is made with soy, so you have to decide if you want to eat soy.
Colin, I have been very interested in all of the info on the Paleo diet. I would like to ask how you get your calcium since your not taking in any dairy products.

I also wanted to add that if you look into the paleo diet, you don’t eat a lot of calcium, as you are dairy-free. However, with the amount of fruits and vegetables you’re eating, your body’s acid-base balance goes from more acidic to alkaline. So, from what I’ve read, the alkalinity increases your body’s ability to actually use the calcium you consume (thereby, you don’t need to consume as much calcium being paleo as before being paleo). Make sense? Maybe. Anyway, being paleo, I do take a calcium supplement (just as a kind of insurance on my bones!).

Drat! For two years I was spoiled getting eggs every week from a friend – all free range hens – the best! But now they are raising goats instead. I would be afraid to try eggs from the super market raw. Guess I need to find another local around here for eggs as this recipe looks yummy.

I looked at the whole 30 challenge website to see what it’s all about, as I know several people who have digestion issues, etc. etc. Anyway, they say not to use any sweetener, not even honey or stevia (although I looked at my bottle of Stevia clear and there are no “hidden” sweeteners that I can see – just GSE) Just thought I’d throw that out there since you mentioned that you could use honey instead of stevia 🙂 Glad to hear that it’s working for you.
Sorry… I should have clarified. You can opt to use honey instead of Stevia (or really any other sweetener) if you are not following a Paleo diet. And Stevia is allowed while doing Paleo – just not during Whole 30. So I guess I am cheating a little with my Stevia use! 😉
Collin – are you feeding your kids a paleo diet? Do they like it? I am intrigued by this concept, but I have a very very picky, very very skinny 11 year old and I’m not sure I can handle cooking two different sets of meals every day and night.
I already try to aim for as many whole foods as possible, don’t use white flour, white rice, etc. I try to minimize refined sugar and use only real maple syrup or honey as much as possible. So I don’t think it would be a HUGE leap for me. But my son’s four major food groups are cheese, milk, bread and barbeque sauce.

They eat lots of Paleo friendly foods… but they also do still eat grains and dairy. We pack there lunches for school, so they regularly eat sandwiches with whole wheat bread and we’ll usually pack crackers or other snack items. Since eating this way, though, they have definitely been consuming a lot more veggies and fruits – which is wonderful! 🙂
Love it! 🙂 We all need more fruits and veggies for sure! Heck – I have been making “green” smoothies for St Patty’s day (that is what I have been telling my boys) Lots of fresh spinach in there along with the frozen fruits and unsweetened almond milk or coconut milk.
Could you share your recipe, Heather? I’m guessing you don’t taste the Spinach in the smoothie? Thanks!

Hi, and thanks for your creamer recipe. I just found this and I love it, I’ve been looking for such a creamer, but to no avail. I am going to try this right now. I just don’t have cocoanut oil. My only question is what would happen if I left out the cocoanut oil in the recipe or is this an ingredient that is absolutely necessary.

It will definitely give you a creamier consistency with the coconut oil and really help it to taste more like coffee creamer. So I would recommend adding this (or a similar fat).
How many servings does the recipe make? Also is there a quick way besides “search” to find your recipes? or can you add a “button” on the top of your web site?
Has anyone tried this with Lite coconut milk? I don’t want to waste a whole can of my precious coconut milk if it won’t be creamy enough using the lite version!

Has anyone tried this with lecithin powder or any other emulsifier in place of the egg?
I just whipped up a batch, and I’m having it in my coffee now. It’s the best thing I’ve found next to my precious half and half! After eliminating all other sources of dairy, I thought I’d never find an alternative that I actually enjoy in coffee. Thank you so much!
