Clean, trim and slice larger Brussels sprouts in half.
In a large bowl toss sprouts with olive oil, pecans, orange juice, and orange zest. Season with a little salt & pepper.
Pour sprouts onto a large parchment paper or foil lined baking sheet.
Bake in the oven at 400 degrees for about 25-30 minutes until tender. Turn sprouts halfway through baking time if possible.
Toss in dried cranberries at the end.
This idea can be adapted in so many different ways!
You can use dried cherries if preferred, or even pick a different nut such as walnuts or pine nuts. YUMMY! A little balsamic vinegar instead of orange juice can be used as well.
Note: I accidentally added dried cranberries with Brussels sprouts in the oven. I would definitely add those after roasting next time. Just a heads up! 😃
These are literally the BEST Brussels sprouts I’ve ever had!
I could have eaten them as a meal in itself. If you’re cooking for a larger crowd, consider doing a couple batches as they may go quickly!
