Easy Slow Cooker Chicken Black Bean Chili

Ingredients

  • 1.5 raw pounds chicken thigh meat, cut into one-inch pieces
  • 2- 14.5 oz cans diced tomatoes, undrained
  • 4 oz. can green chiles
  • 15.5 oz. can black beans, rinsed, & drained
  • 11 oz. can of sweet corn, undrained
  • 1 envelope onion soup mix
  • 1 Tbsp. chili powder
  • 1 teaspoon minced garlic, from the jar
  • 1/4 cup fresh chopped cilantro (optional topping)

Directions

Combine all ingredients in a slow cooker.

Cover and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.

Serve with any desired toppings such as chopped cilantro, sour cream, shredded cheese, tortillas, etc.

This recipe primarily focuses on common and inexpensive pantry ingredients you’ll likely have on hand. Plus, it’s a true one-step meal prep recipe to cheer about! 🙌

This is a perfect idea if you don’t have a plan and want to throw something in the slow cooker! We’re talking minimal effort needed for this idea – these kinds of recipes are the best, especially when they turn out soooo delicious! My favorite slow cooker meals are soups and chili, and this one is a winner!

Hip Recipe Tips:

    • I used chicken thighs, but you can use breast meat if preferred. In a pinch you could always skip the meat, or use canned chicken instead.
    • Feel free to improvise with stewed tomatoes, different veggies, and any type of canned beans desired.
    • Add a hot sauce like Tabasco if desired, or chopped jalapenos. Since I’m making this for my kids I skipped that part, but I’m sure it’d be yummy.
    • I seasoned using a packet of onion soup mix for additional flavor, and it was YUM. Plus, I have one child who can spot a piece of diced fresh onion a mile away, so this is a good alternative! 🙂

    I love the flavor of onion soup mix but don’t care for the onion pieces—texture. I flip the pack upside down to get most of the powder and sift the rest!

    I don’t care for chili but we make a recipe very similar to this one and I could eat it every day! Add 1/8-1/4 cup brown sugar, you won’t be disappointed 😉

    I don’t have onion powder, but I do have French onion soup… would that be a weird substitution? Lol, I’ve pretty much got everything else.

      Same here. No canned goods. We had to quarantine early due to my healthy issues. I’m on day 36. This weekend our month of food we had needed replacing. Sent hubby to 6 places (unfortunately) and there were no canned goods, no frozen or fresh meat or seafood of any kind..and one Target he visited has absolutely nothing at all on any shelf on the food side of the store, nor in the paper products or cleaning aisle. He said it basically looked closed down. I don’t know what we are going to do.
