Try making this delicious and easy Chicken & Black Bean Chili in your slow cooker that primarily focuses on common and inexpensive pantry ingredients you’ll likely have on hand. Plus, it’s a true one-step meal prep recipe to cheer about!

Meal planning procrastinators, unite!

This is a perfect idea if you don’t have a plan and want to throw something in the slow cooker! We’re talking minimal effort needed for this idea – these kinds of recipes are my favorite.  Plus, this chili actually tastes great. My favorite slow cooker meals are soups and chili, and this one is a winner!

Versatile & yummy! Here are a few tips:

  • I used chicken thighs, but you can use breast meat if preferred.
  • Feel free to improvise with stewed tomatoes and any type of beans desired.
  • I had a can of corn on hand and added it, but that’s up to you.
  • Add a hot sauce like Tabasco if desired. Since I’m making this for my kids I skipped that part, but I’m sure it’d be yummy.
  • I seasoned using a packet of onion soup mix for additional flavor, and it was YUM. Plus, I have one child who can spot a piece of diced fresh onion a mile away, so this is a good alternative! 🙂

Slow cooker success

This is definitely a convenient and comforting chili idea that tastes delicious. If you need a quick family meal, try this one as mine sure enjoyed it. This could be a good recipe to keep on hand if you don’t want to heat up your kitchen this summer, too. Enjoy!

    I LOVE slow cooker chili. I usually make mine with ground beef, but chicken chili is really good too. I don’t use Onion soup mix; I just mix up my own blend of seasonings (onion powder, garlic powder, cayenne, chili powder, salt, pepper, some Penzey’s taco seasoning, and paprika for color). And I use Rotel instead of regular tomatoes which I think makes a big difference! To thicken it, my secret ingredient is one can of refried beans mixed into the rest of the ingredients before cooking. I serve it by making a chili bar with a ton of toppings laid out- green onions, tortilla chips, cheddar cheese, sour cream, lime, avocado, diced red onion, and cilantro. YUM!

      Also I add a can of sweet corn, a can of black beans, sautéed onions, and sautéed fresh garlic to my slow cooker chili.

    Sounds really yummy!!! However on the beans it says “rinsed, undrained.” I don’t think that is right…
    Should they be rinsed then added or added straight from the can u ndrained?

    Chicken Breast Filet, 1 can rotel, 1 can corn, 1 can light red kidney beans ( rinsed and drained), 1 package of dry ranch dressing, 1 brick philadelphia cream cheese, add partial package of chili season mix. Cook in crock pot, shred the chicken when done. I even throw my chicken in frozen! I took my ingredients and crock pot to the beach. Threw everything in crock pot in the morning, shredded chicken later in the day, put on low, dinner was ready we I came in from the beach! My favorite!!!

    My go to for nights when I’m at a loss is 8 can chicken enchilada soup. It calls for canned chicken but I always use rotisserie.

    We use a large jar of salsa instead of the diced tomatoes. It’s so easy to change the flavor up that way and SO YUMMY, and for some silly reason gives me less indigestion HAHAHA! We fell in love with the peach mango salsa at Target, am actually making this today per my 10yr olds’ requests lol! Ours is much less runny than the one pictured, and easy to eat on tortilla chips 🙂
