Healthy and Delicious Appetizers: Mini Bell Peppers w/ Hummus & Caprese Salad on a Stick
Yummy and healthy appetizers alert!
These crowd-pleasing appetizers are perfect for any holiday or get-together that you may be hosting; and the best part – you don’t have to turn on the oven as no baking is required! If you enjoy easy entertaining ideas like me, that are low effort, yet still look and taste delicious- listen up!
Mini Bell Peppers with Hummus
Cut mini bell peppers in half and use a pastry bag and tip (or cut a hole in the corner of a Ziploc bag!) to pipe on your favorite hummus for an easy and beautiful presentation. Make a pan of these ahead of time, cover, and store in the fridge until ready to serve.
Caprese Salad on a Stick
For this easy and fun appetizer, simply take a toothpick and skewer a grape tomato, basil leaf, and small piece of fresh mozzarella for a delicious bite size Caprese salad! Make a plateful because these tend to go fast! 🙂 Drizzle olive oil and balsamic vinegar in a small bowl so guests can dip their bite if they prefer. Again, these can be assembled ahead of time for convenience. These fancy fork looking skewers pictured above can be found at your local party supply store, but regular toothpicks work great too!
Side note: I like buying these veggies at Costco – the bags of mini bell peppers, large tubs of hummus, fresh mozzarella, and tomatoes are priced really well. Enjoy 🙂

I made the caprese sticks for a party and they were quite popular. I do want to warn people against using the toothpicks with the colorful plastic tassels on the ends. The color bled onto the mozzarella and it wasn’t so tasty looking when the cheese was bright blue!

I also love to use Aldi fit & active string cheese with the turkey sticks ( beef sticks) and sweet tomatoes in the little dome container yummy I slice the string cheese and turkey stick into thirds and layer them! Our favorite snack for camping, 4 wheeling, and bringing to the beach!

When I made the caprese on a stick last year for a baby shower I found the little fork-like sticks at my local Dollar Tree in Maryland.

the “on a stick” appies are always a hit. I do a modified version with green olives since basil wasn’t the best looking around christmas and it looked great (very festive) on the table. Feta olive cucumber is a good Greek version. I do like the hummas idea too. Really negates the whole double dip worry.
I make the caprese salad on a stick frequently, it’s ALWAYS a hit! FYI-at Costco they sell a tub of small mozz balls in olive oil with italian seasoning-and it makes them look like I put a whole lot of work in…in addition to making them even yummier!

Delicious. It depends on what flavor you get. Costco frequently has samples you can try. It’s creamy and garlicky and just all around good
Hummus is made with garbonzo beans and tahini oil (spelling), and some spices. It is middle eastern food. I love it, but I presume it is an acquired taste. I don’t care for the ones you buy at the store, but those sold at Lebanese etc restaurants. I buy there and take home, that way no preservatives.
This is a little off subject, but the Costco reference reminded me…..I recently discovered that there is a Costco in a city near me, a city I visit several times a year. Do they ever have days or opportunities when nonmembers can go in and look around? I don’t want to buy a membership until I see what their store is like. Thank you for any responses!
You can just tell them, that you are not sure about the membership , but would like to see it for yourself . They will let you in any day. I did it. You just can’t buy anything if you are not a member. I don’t believe they have a special days like that

How far in advance could the caprese salad on a stick be made? Sandy, Costco doesn’t offer passes any more, and I can’t think of any free days, But they do offer refunds if you’re not satisfied with your membership. I don’t know that I’d get one if you’d only be able to shop there a few times a year, though. hth
I would say a couple days. Maybe put in Tupperware with a paper yowl on top so basil won’t wilt, thanks!

Aldi’s has the pint carton (16 oz) grape tomatoes on sale for .99 this week. Price match at Walmart for .99 if you prefer. Walmart’s listed price was $2.49. Also great price matching on 16 oz mini carrots for .99, avocados .29, carton of mushrooms .99, and celery .69 (if I remember correctly).
