Roll prepared "Fathead" dough very thinly on a baking sheet covered in parchment paper. Bake for 12-14 minutes at 400 degrees until slightly brown. Cut into long lasagna "noodles", and set aside.

Saute onion, bell pepper, and garlic with a little cooking oil in a large skillet.

Add both ground beef and sausage. Crumble and cook meat in the skillet.

Stir in marinara sauce.

In a small separate bowl stir ricotta cheese, egg, and fresh basil together.

Start compiling lasagna in a 9x13 casserole dish by adding sauce to the bottom, followed by a layer of ricotta mixture, shredded cheese and then the "noodles".

Repeat and then end with a layer of sauce and shredded cheese.

Bake covered with foil for 25 minutes on 375 degrees. Bake another 10 minutes uncovered. (Tip: Spray foil with non-stick spray FIRST to avoid the foil from sticking to the cheese while baking.)

Serve with additional chopped basil, if desired.

Love lasagna but not all the carbs?

What if I told you there IS a way to make a delicious Keto friendly version that actually tastes like REAL lasagna!? 😋 Plus, there isn’t any sort of veggie noodle involved. Awesome, right? 


Try making lasagna with strips of “fathead” dough to replace noodles. Just make a batch of this popular mozzarella cheese and almond meal based dough, then continue compiling your lasagna. Trust me – this is a genius idea!

Sometimes it’s hard to find meal ideas that the entire family will enjoy, especially when you are eating a certain way. This recipe does not disappoint! The kids will LOVE it too!


Make a delicious meat sauce on the stove using both sausage and ground beef. Then build layers of sauce, cheeses, and the keto friendly “noodles”. SO good.

This recipe is easy to adapt to whatever you and your family like by using different cheeses, spices, etc. For instance, my kids don’t care for ricotta, so I just used a small amount. You could even skip it or use cream cheese instead.


Tip: I used a low carb brand of Marinara sauce for convenience, but you could easily make your own low carb sauce simply by using crushed tomatoes, tomato paste and Italian herbs.

    How long did this take?? Just curious as I want to make on a week night:)

      She listed prep time as 30 min and cook time 35 min. That assumes the dough is already mixed and just needs to be rolled out so add some additional time to make the dough. For me I find lasagna from scratch is just a bit too labor/time intensive for a weeknight meal but of course that’s up to each individual to decide. I like to make it on a Sunday and then enjoy leftovers during the week. Hope that helps!

      It did take me about an hour maybe more. You can always make the fathead noodles the day before, as a time saver.

      You could also cook the veggies & meat the night before, then toss with sauce the next night, to save a bit of prep time.

      other people commented you can use coconut flour on the fathead dough link. hope that helps.

      Coconut flour might taste a little too sweet (though w/ a small amount, maybe not). If you’re not allergic to all treenuts, maybe hazelnut or other nut meal/flour? Could also try flaxmeal (easy to grind your own from flax seeds) if it doesn’t cause you stomach problems.

      Make a chicken crust pizza. Puree 2 raw chicken breasts add an egg and some spices. Press flat onto a greased cookie sheet. Bake for 15 min 400 degree oven. Add topping and bake another 10 min.
      Seriously good.

    Does anyone have an idea to make the fathead dough with no dairy? Maybe the daiya soy cheese? if anyone ever tried or has another idea for substitute, thanks in advance!

      The cheese is what binds and holds it together, so not really any substitute for it

    This summer when my zucchini plant was producing a couple zucchini a day, I made lasagne with strips of zucchini that I had sliced on my mandolin. I needed to sweat some of the moisture from the zucchini so I sauteed them in my non stick pan (no oil) and then pressed them a bit between paper towels. I then layered the zucchini as I would the noodles and assembled the lasagne. Bake until bubble and let sit 10 minutes before serving. It was such a hit, I have made it at least 4 more times.

It is amazing & I think it tastes better than regular lasagna. It does take some time as you grill (inside or out) the lasagna noodles first – but definitely SOOO worth it!

    Do you have to cook the noodles before using them in the lasagna or do you put the raw noodles in the lasagna and then bake?

      So yes, you would need to bake the fathead dough, as directed , and then cut it into long strips as “noodle” shapes. Then compile lasagna. Hope that helps!

    My husband has recently been diagnosed with diabetes. He is a very picky eater. I fixed this pizza recipe with a cheese blend. It was very filling and so delicious.
    Tonight I’m going to make lasagna for tomorrow nights dinner and try using the fathead dough for noodles. I can’t wait to see how it turns out.

    I was making this for dinner last night when we had unexpected company (who had no idea of the KETO diet). I made sauce from scratch (deleting the green bell pepper for my husband’s sake) and grated in a zucchini instead. As a way of adding more vegetables to the dish, I browned thin sliced eggplant in a dry non-stick skillet and did the same with more zucchini slices, patting remaining moisture away with paper towels. To the ricotta I added a thawed frozen box of squeezed spinach.

    The layering was pretty traditional and the final results were unanimously delicious! One of our guests proclaimed he was a “Lasagne Snob” and this dish passed with flying colors! I’m looking forward to trying the Fathead dough for pizza and other dishes with ideas found on Pinterest.

    Lasagne is alway a little labor intensive, but if you have the time or divide the process into parts (i.e. make the sauce the same time as you make dinner tonight) it speeds things up. I will make this again with enthusiasm.
