Low Carb & Keto Broccoli Cheddar Soup

I like that there are just a few simple ingredients needed for this recipe, and you can keep it meatless, or add in bacon, ham, or shredded chicken at the end. SO good.
Keto Broccoli Cheddar Soup

Ingredients
- 1/4 cup diced onion
- 1/4 cup diced celery
- 2 tablespoons butter
- 1 and 1/2 cup broccoli, cut into small pieces
- 2 cups chicken broth
- 1/4 cup heavy whipping cream
- 1 cup cheddar cheese, shredded
- 1/2 teaspoon Xantham Gum
- salt & pepper to taste
- a few slices of bacon or ham if desired
Directions

In a large saucepan on the stove, saute onion and celery with butter until translucent. Season with salt & pepper.

Add chopped broccoli and saute for a couple of minutes.

Pour in chicken broth, and cook until broccoli is tender.

Turn off heat and stir in whipping cream.

Stir in cheese to melt.

Whisk in Xanthan gum to thicken soup.

Serve with a few slices of cooked bacon or ham if desired. YUM!
Tips:
- This recipe makes enough soup for about three bowls, so if you were feeding a large family I’d consider doubling it.
- Xantham gum is a great way to thicken low carb soups and sauces. You could skip it, but a very small amount makes the broth super rich, creamy and gives it a thicker texture.

The first stage is induction, in which you eat 20grams of carbs per week and fatty foods. That lasts about 2 weeks, then you slowly add carbs and other foods in. This has been the only effective diet I’ve been on and the easiest to do. Give it a shot!
Can you replace the xantham gum with flour or cornstarch? This would be amazing with some shredded chicken.
You can definitely use them to thicken but they will add carbs

I found Xanthum gum in bulk at WINCO, so you could buy just a little to try it. It was by the flour or maybe in the bulk spices at WINCO.

This was amazing!! I will probably make a double batch next time! I chopped up the broccoli pretty fine and added a little extra. It almost didn’t need the thickener! Great flavor!!

I made this and it was very yummy. However, I have never eaten xanthum gum before and this could be the last time. I have some gi issues and I became suddenly ill and let’s just say I’ll spare you the rest of the details. I don’t think it probably causes this type of reaction in everyone but I just wanted others to know if they have gi issues.
