Low Carb Olive Garden Zuppa Toscana Soup (Keto Friendly Recipe)
Love Olive Garden’s Zuppa Toscana?
It’s so simple and quick to make at home! If you’re eating low carb/Keto and want to enjoy this classic Olive Garden soup, try swapping out the potatoes for cauliflower. Trust me, this soup is so flavorful, you won’t even miss them!
Low Carb Zuppa Toscana (Olive Garden Copycat Recipe)
yield: 4 SERVINGS
This popular sausage and potato soup from the Olive Garden is very easy to re-create at home.
Ingredients
- 1 lb Italian sausage (I used Mild)
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 head of cauliflower, cut into florets
- 16 oz. chicken broth
- 1 quart water
- 1 teaspoon bouillon (if desired for extra flavor)
- 3 cups kale or Swiss chard, chopped
- 1 cup heavy cream
Directions
1
In a soup pot on the stove, crumble and brown sausage over medium-high heat.
2
Add onion and garlic and cook until translucent in color. Season with salt, pepper, and red pepper flakes.
3
Reduce heat to medium and add cauliflower florets, broth, and water. Stir and add Bouillon, if desired.
4
Cook on medium heat until cauliflower is tender, about 15-20 minutes.
5
Reduce heat to low and sprinkle in chopped kale. Pour in cream and stir well. Serve hot.
Hip tip for making low-carb Olive Garden Zuppa Toscana: If you wanted to make this in your slow cooker, brown the meat with onions and garlic, then place inside the slow cooker along with the broth and cauliflower. Cover and cook on HIGH for 4 hours or LOW for 6-8 hours. Stir in kale and cream at the end. Serve hot.
This soup is AMAZING!
It’s my favorite dish at Olive Garden, and this version tastes so similar, maybe even better! My husband said he liked the cauliflower even more than potatoes, and my kids actually ate the cauliflower without complaining! The leftovers are really great as well.
We really LOVED this easy low carb meal idea!

Hi Lina, thank you for sharing this Keto friendly diet. Do you have any advice or suggestions regarding Keto friendly beverages that does not have a funny after taste from stevia?
La Croix is my favorite drink for Keto!
I really love Klarbrunn
Ketochow.xyz makes low carb shakes that you could try in different flavors.
I found this sweetener. It is made with stevia but has zero after taste. I get it from Wal-Mart. The brand name is Pyure organic . It is delicious. Try it you will like it.
Thank you! Going to try this with coconut milk and no red pepper flakes to make it AIP friendly.
Perfect! Enjoy Jen 😀
I’ve made it with potatoes and everyone loved it, I’m now excited to make it this way. Thx for sharing!

Any idea how many carbs per serving? Thanks for recipe
Hi there! I know this is kinda off topic however I’d figured I’d ask. Would you be interested in exchanging links or maybe guest authoring a blog article or vice-versa? My site covers a lot of the same subjects as yours and I think we could greatly benefit from each other. If you happen to be interested feel free to shoot me an e-mail. I look forward to hearing from you! Superb blog by the way!
Thanks Lina! I really love the low carb recipes that you share.
I’m so glad!
I just made this and it is really good! Thanks so much for sharing, Lina. Keep the low carb recipes coming, please!
I’m so glad! Yay! Thanks for sharing.
What kind of bouillon do you use? I have only heard of chicken and beef. Does it matter or what do you recommend?
Oh I just used chicken since it calls for chicken broth 👍
Can you give us an idea of calories per serving? Fat, protein, carbs. Making this now. Thank you!
Can this be frozen?
Would frozen cauliflower work instead of fresh, do you think? Thanks!
Yes I think that could work!
Thanks for the recipe.
Do you have the nutrition info on this? Carbs, protein, and fats?
It is delicious. I am eating this now!
One of my favorite soups!
By the way, when I make this (any version) I use Kroger Hot Italian sausage and leave out the red pepper flakes.
How many net carbs?
Would love to know macros please
Does any one know what the nutrition for this would be. I have to keep track of my carbs and such on paper.
I make this with Costco meatballs when in the hurry, also with potato’s or pasta and add parsley . Yum!
Great tip! Thanks for sharing!
Where do I find carb count per serving on this recipe?
https://hip2keto.com/recipe/low-carb-zuppa-toscana-soup/
Actually we have the nutritional label at the bottom of post on hip2keto, our sister site . Hope that helps 👍
I have found several recipes for this soup while looking for a lower carb version.
None say how much a serving size is but gives the nutrition information “per serving”
Can you advise.
Thanks

Here’s the version with nutritional info on our site Hip2Keto. Servings size is 6 so I would divide soup into 6 bowls to get exact serving amount. Thanks
I’m getting different nutritional info from My Fitness Pal when I entered all the ingredients.
6 servings
Per serving
168 calories
9.3 carbs
11.7 fat
6.3 protein
Only changes were no broth, just water with correct amount of better than bouillon to make broth.
This soup is amazing!!!
Thanks Lacy!! Have you tried the Keto Taco Soup? It’s fantastic too <3 https://hip2save.com/recipes/easy-slow-cooker-keto-taco-soup/
Any suggestions on cooking times in a pressure cooker/instant pot?
I made it with zucchini instead of cauliflower. Amazing!
Oh nice! Thanks for sharing ❤️
Just made this soup and is so tasty and easy and makes a whole lot for leftovers!! Thanks so much! You can’t even miss out with this low carb version!
Has anyone used this recipe with turnips instead of cauliflower or potatoes??
Could I replace the kale with spinach, not crazy with kale or Swiss chard
Yes I think that works too! Thanks Cherie ❤️
My fitness pal app gave me 791 calories yikes
I made a double batch, keto style! Omg it’s awesome 👏🏻. Thank you for the recipe
Yes!!!! This is so good! Thanks Jill!
Im going to make this with radish chucks! Which when boiled tastes like baby red potatoes!!
That’s awesome! Let us know how it goes – great idea!
I have used canned evaporated milk instead of the heavy cream. Works & tastes great too. Also added a small amount of instant mashed potatoes to give it the potato taste & thicken a bit. Love it!
Oh i love those suggestions thanks!
Omygosh made this tonight, everyone absolutely loved it!!
So easy & delicious..
How would you make this in an instant pot? I don’t want the veggies to overcook.
Made this tonight for my family, one of whom doesn’t like soup, and another that doesn’t like cauliflower, and they loved it! It was easy and quick, which makes it a winner in my book! Thank you for sharing this 😊
Yes! I’m so glad and thanks for sharing ❤️
This is so delicious!! I used hot Italian chicken sausage. I loved the cauliflower and didn’t miss the potatoes at all!! Still hearty and filling. Absolutely perfect for a chilly winters day/night. My husband and son loved this too! Thank you!!!
Oh good! I’m so glad you all enjoyed 👏😀
This soup is incredible!! Fantastic flavors and textures!! I used organic chicken bone broth instead of stock, no onions. I used Red Swiss chard for the greens and added about 1/2 of a medium diced eggplant as well. So absolutely amazing!!
Wow thanks so much for sharing!

I made this last night and I am blown away! This is my favorite soup but I am trying to cut out unnecessary carbs so I gave this a try. I put in the kale and cauliflower at the beginning because I wanted it to get mushy since I’m not a huge fan of cauliflower or crunch kale. I swear I can barely tell the difference between the cauliflower and potatoes! This will definitely be going in my recipe rotation!
Oh hooray 😃 I love it too and am so glad it turned out tasty! Thanks Victoria!
This is delicious! I added a bit of Parmesan cheese to the top once I served it and optional additional red pepper flakes. I had to increase the water and broth to cover the head of cauliflower also, must have been a large cauliflower. So good since I was craving the Olive Garden version. Hit the spot and so filling!
