Tips for making the best marry me chicken recipe:

  • If you can’t find thin chicken cutlets at the store, cut 2 thick chicken breasts in half lengthwise. This is what I did and it worked out well for this recipe.
  • Be sure to grab the sun-dried tomatoes in a jar, as they are already tender and you’ll use a little bit of the oil to cook the chicken
  • This recipe will easily make 4 servings. I think if you use an extra-large skillet doubling this recipe would work out for a larger family. You could cook your chicken in two batches and then make the sauce.
  • Leftovers warmed up are even better the next day as the sauce is so delicious. 😋

plated sun-dried tomato chicken

Marry me chicken tastes so fancy!

I love the elevated taste of the sun-dried tomatoes and the sauce is over-the-top delish. Make sure to spoon it over the chicken breasts as it really makes this meal extra special. Serve this over rice and add some steamed broccoli as an idea for a complete meal that’s satisfying and is honestly pretty impressive!

Here’s what my sidekick Emily has to say about this sun-dried tomato chicken recipe:

“If you’re looking for a way to level up your typical chicken dinner, this sun-dried tomato chicken recipe is the way to go! You cook the chicken in the oil from the jar of sun-dried tomatoes. Brilliant! It adds so much flavor. The creamy sauce is bursting with flavor from the sun-dried tomatoes, garlic, basil, and parmesan. We served ours with cauliflower rice and I’ll definitely be making it again!”

I just made the sauce (no chicken) and it’s amazing. One of my daughters is vegetarian and the other doesn’t really like chicken that much, and I am going to serve the sauce over pasta with sides of steamed green beans, roasted cauliflower and some sautéed shrimp for the family members who eat seafood. I love that this recipe is so easy to take the meat out and enjoy the delicious sauce!

    • Lina D (Hip2Save Sidekick)

Oh YUM! The shrimp sounds amazing! I’ll be right over! Ha

I literally just made this same recipe except that I used a Cajun seasoning on the chicken tenders then dredged it in flour before cooking on both sides. Then I did the Sun dry tomatoes, garlic, and some red pepper flakes and chicken stock and light cream. Added another spoon of Cajun seasoning and some parm in the cream mixture. Added the chicken back in.
    Spicy and yummy over linguini!

    • Lina D (Hip2Save Sidekick)

Thanks for this great recipe! I had a jar of sundried tomatoes for a while and finally got to use them. I tweaked the recipe a little. I added goat cheese crumbles at the end and served over pasta. Was like a restaurant meal!

    • Lina D (Hip2Save Sidekick)

Oh love the goat cheese idea! Yum! Thanks Sophie!

I use this base for a spinach tortellini – so effortless; hadn’t thought of doing it with chicken breasts. Will definitely try it.

My husband and boys would think I had something against them making this for them😁

Sounds yummy! Just a suggestion…will try with Costco organic chicken thighs and flatten between parchment paper (dark meat is moister and more forgiving than white breasts – so tend to like dark meat better). Thanks so much for the recipe, Can’t wait to try! 🙂

    • Trish (Hip Sidekick)

You’re SO welcome, Shirley! Sounds yummy with chicken thighs too! Enjoy! ❤️
