Matthew McConaughey knows how to make a salad with swagger. His viral wasabi tuna fish salad rocked the internet harder than a Lincoln commercial. This is a similar spin using poultry instead of fish that my family has been making for the last year, and loving it.
Make chicken salad on a Sunday and then snack on it with crackers during the week, or use this for quick, delicious lunches.

You may find this chicken salad to be unhinged, but in the best way!
This bold, spicy, and surprisingly balanced salad is where creamy crunch meets Texas heat. Plus, just like our guy Matt, it doesn’t take itself too seriously. It’s high in protein, low in drama, and ready in five minutes. This chicken salad is perfect for a work-from-home lunch or a red carpet snack!
The spicy wasabi balances well with the crunchy sweet apples, mayo, and peas and carrots. I know it sounds nuts, but all of this pairs well! My favorite part, though, is the crispy jalapenos from the salad section of the grocery store. It adds crunch and a yummy additional flavor.





Matthew McConaughey Chicken Salad

A creamy chicken salad with bold wasabi flavor, sweet corn and apples, and crunchy jalapeños.
Ingredients
- 2 - 12.5 oz. cans chicken breast in water, drained
- 1/2 cup real mayo
- 1/4 cup chopped red onion
- 1/3 cup frozen corn, thawed
- 1/3 cup frozen peas, thawed
- 1-2 teaspoons wasabi paste, according to taste
- 2 teaspoons Italian dressing
- 2 tablespoons dill or sweet pickles, chopped
- 1/2 an apple, chopped
- 1/2 cup crispy jalapeno salad topper

Add all the ingredients to a large mixing bowl. Mix to combine. Taste it and add salt, pepper, and anything else that feels right.

Scoop it into lettuce cups, slap it between slices of bread, or pile it on crackers for a delclious snack.
More tips for making this bold-tasting chicken salad:
- If you can’t find the crispy jalapenos, you can dice up some pickled ones or crush up some jalapeno-flavored potato chips!
- Chicken salad will last in the fridge for about 3 to 4 days when stored in an airtight container. Give it a good stir before serving again—the flavors tend to deepen, and a remix helps!
- You can consider replacing some or all of the mayonnaise with plain Greek yogurt as a lower-calorie swap if desired.

Chicken salad is my favorite way to jazz up canned chicken!
It’s easy to add or omit any ingredients you don’t love. I typically will not even measure and just eyeball everything. I am a huge chicken salad fan. We love a good cilantro and avocado version, or sometimes a classic grape and walnut chicken salad hits the spot.

I’ve made his tuna salad (maybe slightly different than this) before and it’s pretty good but if you put too much wasabi it can be overpowering! A little dab will do.
