Sometimes I can get in a rut where I make the same three chicken recipes (anyone else? 🙋♀️). This easy skillet chicken tastes fantastic and oozes comfort food vibes. Your efforts will result in tender pieces of chicken with a drool-worthy Italian seasoned sauce with cream and basil.
Sun-Dried Tomato Chicken Skillet Meal

Skillet-cooked chicken with a creamy sun-dried tomato sauce that's an easy change up from your typical chicken dinner.
Ingredients
- 4 chicken cutlets (about 1.5 pounds)
- 1 tablespoon oil from jar of sun-dried tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup sun-dried tomatoes in oil, drained
- 4 cloves garlic, minced
- 1 tablespoon onion flakes
- 1 teaspoon Better Than Bullion, chicken flavor
- 3/4 cup chicken broth
- 1/2 teaspoon Italian seasoning
- 3/4 cup heavy cream
- 1/2 cup parmesan cheese, shredded
- garnish: 1/4 cup fresh basil, chopped (optional)
Directions

Pat the chicken dry. Season it with salt and pepper on both sides.

Heat up a large skillet on medium heat with a tablespoon of oil from the jar of sun-dried tomatoes. Cook the chicken for about 4-5 minutes on each side until the internal temperature reaches 165 degrees. Place the cooked chicken on a plate and set it aside.

To the skillet, add the sun-dried tomatoes, garlic, and onion flakes, and stir. Cook the garlic for a minute, and then add the bouillon and whisk in the chicken broth, and Italian seasoning.

Turn down the heat to medium/low and whisk in the cream. Add the parmesan cheese, and continue whisking. Your sauce will start to thicken. Add the chicken back to the skillet, and spoon the sauce over it. Garnish with fresh basil.

Serve as desired over rice or pasta with the cream sauce.
Tips for making the best sun-dried tomato chicken skillet recipe:
- If you can’t find thin chicken cutlets at the store, cut 2 thick chicken breasts in half lengthwise. This is what I did and it worked out well for this recipe.
- Using an instant-read thermometer to cook the chicken to 165 will ensure it’s not overcooked or undercooked.
- Be sure to grab the sun-dried tomatoes in a jar, as they are already tender and you’ll use a little bit of the oil to cook the chicken
- This recipe will easily make 4 servings. I think if you use an extra-large skillet doubling this recipe would work out for a larger family. You could cook your chicken in two batches and then make the sauce.
- Leftovers warmed up are even better the next day as the sauce is so delicious. 😋

I just made the sauce (no chicken) and it’s amazing. One of my daughters is vegetarian and the other doesn’t really like chicken that much, and I am going to serve the sauce over pasta with sides of steamed green beans, roasted cauliflower and some sautΓ©ed shrimp for the family members who eat seafood. I love that this recipe is so easy to take the meat out and enjoy the delicious sauce!

I literally just made this same recipe except that I used a Cajun seasoning on the chicken tenders then dredged it in flour before cooking on both sides. Then I did the Sun dry tomatoes, garlic, and some red pepper flakes and chicken stock and light cream. Added another spoon of Cajun seasoning and some parm in the cream mixture. Added the chicken back in.

Thanks for this great recipe! I had a jar of sundried tomatoes for a while and finally got to use them. I tweaked the recipe a little. I added goat cheese crumbles at the end and served over pasta. Was like a restaurant meal!
