Turkey Pesto Panini Hip2Save

Here’s a delicious way to use up some leftover turkey meat from Thanksgiving! I love making Panini style sandwiches for my family, because they are easy and similar to making a grilled cheese sandwich except with fancier ingredients. 🙂 Plus, the possibilities are endless with all the combinations of cheese, veggies, and meat you can choose. Today’s sandwich has the wonderful combination of pesto, turkey, cheese, and avocado. Check out Collin’s recipe for homemade pesto or store bought works great too for this.

Turkey Pesto Panini

Ingredients for each sandwich:
* crusty white baguette cut in half
* 2 slices mozzarella cheese
* 1/2 avocado, sliced,
* 2 tablespoons Pesto, homemade or store bought
* 3-4 oz. left over sliced turkey meat
* few slices of cooked pancetta, or bacon  (optional)

Directions:

Heat a little olive oil in a grill pan over medium-high heat. Spread pesto over 1 side of bread and top with mozzarella, turkey, pancetta, avocado and top half of bread. Add sandwich to pan and grill until the bread is golden and the cheese is melted, about 2-3 minutes per side.

Customize a sandwich to what your family enjoys.  Tomatoes, artichokes, or roasted red bell peppers would be some other excellent alternatives.

    That looks good! To bad we got a small turkey and all the meat that’s left over is going into turkey soup tomorrow! Pinning for after Christmas when we’ll do the bigger bird!

    We made knock off turkey a la king… can of cream of chicken soup with half can of milk. Add turkey and peas and pour over rice!

      I love this! We followed the butterball recommendations of 2 lbs per person. We had 9 people so big turkey lol 🙂 somehow I think those guidelines were a little on the generous side because we had a TON left over. We made these sandwiches tonight and they were delish!
