Slow Cooker Shredded Buffalo Chicken

Ingredients

  • 4 -5 skinless, boneless chicken breast halves (mine were frozen)
  • 1 (12 ounce) bottle buffalo wing sauce, divided
  • 1/2 (1 ounce) package dry ranch salad dressing mix
  • 2 tablespoons butter
  • 2 packs of soft rolls like Kings Hawaiian brand rolls
  • (Optional: Try serving with coleslaw mix and bleu cheese dressing, fresh bleu cheese, or ranch dressing.)

Directions

Place the chicken breasts into a slow cooker, and pour in 3/4 of the wing sauce and the ranch dressing mix.

Cover and cook on low for 6 to 7 hours.

Once the chicken has cooked, drain liquid if any, add the butter, the rest of the buffalo sauce, and shred the meat finely with two forks.

Serve with rolls and coleslaw with blue cheese or ranch dressing if desired.

      Keep an eye out at your grocery stores, especially if you have a Kroger. Last January, I saw the round stainless steel one that I bought at Target before Christmas at Kroger marked down to $19. I paid only $15 at Target, but it is well worth a bit more despite the lack of bells and whistles. I am using it right now to make a knock-off Chipotle rice bowl dinner.

        I agree with the above statement. I bought a very basic crockpot for $15. The crock pot brand. I absolutely love it. Aside my cast iron Dutch oven it is my most used kitchen appliance.

    Too funny. I just made similar on Sunday. I used Honey BBQ sauce and no ranch. It fed my family of 3 for 4 meals! It goes well to eat the BBQ chicken on ciabatta rolls.

    how would i cook this if i dont have a crockpot??

      I would just put it in the oven at a low temp (325?) and slow cook in there in a covered pan or oven safe pot. It would probably take only a couple hours and you’d need to keep an eye on it. You’ll know it’s done when it shreds easily 🙂 Thanks!
