Directions

Line a loaf pan with parchment paper.

Fit one layer of ice cream sandwiches on the bottom. I fit two full ones and then cut one in half. If your sandwiches are shorter and can fit facing the opposite direction, you can rotate them as well.

Spread half the whipped topping on top of the sandwiches followed by another layer of ice cream sandwiches and then the remaining whipped topping.

Then sprinkle the chopped candy bar on top, or chocolate chips would work, too!

Freeze for at least two hours or up to a week.

To serve, pull up on the parchment paper – the cake should come right out. Place it on a cake plate. Before serving, drizzle the cake with chocolate magic shell topping or chocolate syrup if desired. Enjoy!

This fun ice cream sandwich cake is a simple no-bake dessert recipe made from (you guessed it!) ice cream sandwiches. It takes less than 10 minutes to put together, but it comes out looking like a fancy icebox cake with chocolate cookie layers and vanilla ice cream. YUM!

I love this cake hack because it’s cheap and easy to pull off, trust me!

It’s also a pretty clever and frugal alternative to the ice cream cakes you would pay so much more for at places like Baskin Robbins or Cold Stone Creamery.

You can make this into a special occasion birthday cake to celebrate or enjoy it on a random weeknight for dessert! 😋

This ice cream sandwich cake is totally customizable too, so you can tailor it to your family’s tastes. The possibilities are endless! You can get super creative with the ingredients, or stick to the basics as I did.

For instance, I am using classic vanilla ice cream sandwiches, but if there is a special flavor of ice cream sandwich you like, like chocolate or Neopolitan, those would make for yummy swaps. Next time I’d like to try using cookies & cream ice cream sandwiches. YUM!

I used whipped topping for the middle and outside, but you could use any flavored softened ice cream and spread it on if you’d prefer. I have even seen other examples using chocolate pudding with the whipped topping for a chocolatey version of this yummy cake.

More tips for making this ice cream sandwich cake recipe:

  • Not all ice cream sandwiches are the exact same shape/size, and loaf pans vary a little too. You may have to cut an ice cream sandwich in half to make a layer in your loaf pan as I did.
  • I drizzled my ice cream sandwich cake with magic shell chocolate after freezing and before serving. You could also use any chocolate syrup topping. Caramel would be yummy too!
  • Top with sprinkles to customize your cake for any occasion or holiday (rainbow for a birthday, red, white, and blue for Independence Day, etc). Add candles for a birthday cake!
  • This is a great make-ahead dessert because you can compile it in advance and then serve it straight from the freezer at your leisure. Just keep in mind it needs at least two hours to freeze before serving.
  • Want an extra topping? Add some crushed-up Oreos to top off your cake!

An ice cream sandwich cake is so simple to make, super tasty, and it looks A-M-A-Z-I-N-G both straight out of the freezer and cut in slices!

    I love this! I have made it with heath bars and drizzle with caramel syrup and the chocolate syrup that hardens. Also great sprinkled with nuts or marashino cherries! Never thought to use a loaf though, its so decadent and pretty. I usually just put mine in one of those throw away foil pans. Thanks for reminding me of this, Lina!

    I made a larger version of this a few weeks ago. 24 pk of ice cream sandwiches and a 16 oz Cool Whip. Parchment paper lined in cake pan. 12 sandwiches, half of Cool Whip, drizzle desired syrups and we used mini M&Ms. Repeat all steps again. So so good!!! My kids loved helping and when the Cool Whip freezes, it tastes like icing!! I was pleasantly surprised by how good it was!!

    Has anyone ever used real whipped cream from a can for this? I can’t eat cool whip, it has MSG in it, which gives me a migraine.

      I would think the canned kind would melt. I would whip some real whipping cream and sweeten it to taste. Or i have used Tru Whip which has cleaner ingredients and can be found next to cool whip usually. Hope that helps!

      Are you sure it has MSG in it? I know “natural and artificial flavors” can be almost anything, including MSG, but since MSG imparts an umami flavor I typically don’t watch out for it in sweet foods.

    I use a 8×8 or 9×9 square pan with one box of ice cream sandwiches. One box fills it completely. When serving I cut into squares. Makes 9 large servings.

    I have also made using a 9×13 pan and two boxes of ice cream sandwiches for a large crowd.

    Never fails to impress. So good!!

    The grandkids use to make this for my husband’s birthday when they were little. It was so easy and they took turns unwrapping the ice cream sandwiches. I would get chocolate and caramel syrup. Of course sprinkles too! They loved it. Now they are old enough to actually bake him a cake. Again they all take turns measuring out the ingredients, mixing, etc. it’s a great tradition.
