Cooking with Collin: This Sweet N’ Sour Chicken is So Yum!

Today’s Cooking with Collin should really be called Cooking with Bryn as my sister has actually taken the time to write up one of her favorite recipes: Sweet N’ Sour Chicken! Yummy! 🙂 I hope that you enjoy it as much as she does. Please note that Bryn was actually given this recipe by a good friend and so I have no source to credit.
Sweet and Sour Chicken
yield: 4 SERVINGS
Make this delicious and easy recipe with lots of flavor!
Ingredients
- 6-8 Skinless, Boneless chicken breast halves (cut into 1 inch cubes)
- Vegetable Oil
- 2 Eggs
- 1 cup Flour
- 3/4 cup Sugar
- 1/2 cup Pineapple Juice
- 1 20 oz. can Pineapple Chunks
- 1/4 cup White Vinegar
- 3/4 cup Ketchup
- 1 1/2 tsp salt
- 1 T Soy Sauce

Preheat oven to 350 degrees F.

Sprinkle chicken breasts with garlic salt.

In a frying pan on medium-high heat, add 1/2-inch vegetable oil. In a bowl, beat 2 eggs. Place flour in a shallow bowl. Dunk pieces of chicken in the egg, and allow excess to drain. Dredge the chicken pieces in the flour coating thoroughly. Drop pieces into the hot oil and cook until deep golden brown. Turn as necessary to cook evenly on all sides.

While chicken is cooking, combine the following in a saucepan over medium-low heat: sugar, pineapple juice, white vinegar, ketchup, salt and soy sauce. Stir mixture occasionally until it comes to a low boil and then reduce heat just enough to keep the sauce warm.

Place cooked chicken pieces and pineapple chunks in a 9×13 pan. Pour warm sweet and sour sauce over the top.

Bake in oven for 30-45 minutes, and serve over rice or egg noodles.

I am going to lose the breading and try this in the crock pot with some pea pods and sweet onion added.
Has anyone tried this without frying the chicken? I was thinking about boiling the chicken and then making the sauce with pineapples. I just had a baby and an trying to watch our calories.
I pan seared my chicken with one tbsp olive oil (no flour or egg) and added cayenne pepper because we like things spicy, plus it went nicely with the sweetness of the pineapple. I also added onion and red bell pepper. Served over brown rice.
Wow, this is so weird. My husband does not check this site and this is what he made for dinner last night for the first time haha. It was delicious!

Made this tonight (added some onion and broccoli to get our veggies in and so I didn’t have to make another dish), and it was a huge hit! My husband is more of a “savory” person, but loved this, and I think had more than two helpings. I had to take it away from the table so there would be some for lunches tomorrow 🙂 Thanks for sharing a great treat!

Collin I totally made this dish a whole lot easier just use chicken nuggets instead of doing all that extra work My 11 year old daughter did it all by herself Kids need to cook I think we should add easy dishes for the kids to try to make for us It really makes them feel important to do it by there selves Boil n bag rice its 45 mins to easy din din!!Delish too Perhaps its just better when someone else makes it for me!

Finally made this tonight! Had been looking forward to it all week as Chinese is a big craving this pregnancy. Added sauted green pepper and carrots. Pineapple chunks absorbed too much of the sauce and were not edible for me 🙁 I love pineapple too! Hubby could only taste and smell the vinegar and barely ate it. Maybe next time I will only do a splash of vinegar for the sauce and reduce the sugar since the pineapples were really sweet or keep pineapples to the side to add to the plate when serving. Thanks for posting! It was nice to try 🙂

This is a really good recipe. Sweet and sour chicken is one of our favorites! Since we just have 2 adults and a toddler in our family, I felt there was too much chicken for us. I had added broccoli already, but I think next time I will keep the same amount of sauce, half the chicken and add a bag of stir fry. 😉
Since you posted this, I will be making this again tonight! We loved it! Making it w/ fresh pineapple. I think by flouring the chicken, it makes a big difference…the chicken holds onto the sauce that way. I’ve made a few versions of pineapple/swt & sour chicken, but this is by far the best.
I made this dish to take to my parent’s house for our “game night” every Friday. It was my turn to cook, and this sounded so good! I added chunks of green and red bell peppers and onions to the baking dish along with the chicken and pineapple. Added lots of color and flavor to the dish, and the time baking was enough to cook them.
This recipe was a HUGE hit!!! Even my Dad told me “that was really good”. That is unheard of praise from him! He’s normally not one to say anything. We can tell he likes something if he takes seconds. Even my mom had seconds!
My favorite part was that other than the pineapple, I had all the ingredients for making this dish! Love, love, love recipes that don’t call for a bunch of unusual ingredients that I have to go out to get! Also, this makes a huge batch, so love that I can freeze some for another meal!
