easy slow cooker pot roast recipe

Looking for a delicious dinner recipe?

One of the very first recipes I learned to make early in my marriage was a simple slow cooker pot roast. Even to this day, it’s my hubby’s favorite and he still gets really impressed (shhh – don’t tell him it’s so easy to make)! This is how my mom makes pot roast; and on a chilly day, it’s so comforting!

Hip Tip – If you’re thinking of making your own onion soup mix, here is a recipe to do just that!

Does Lina have a blog? I have been loving all her guest posts!! If crock pot meals are really that easy I guess I need to think of new excuses why we are having frozen pizza again lol ๐Ÿ˜‰

    • Collin (Mrs. Hip)

Add cream of mushroom and you’ve got a nice gravy.

    • Happymama

I may try that! I put a roast in the slow cooker this morning:)

    • Lorissa

I don’t use the tomatoes but I do use a can of cream of mushroom and I use the Beefy onion (vs. the onion). It definitely makes a nice gravy without having to mix with flour or corn starch!

    • Chloรฉ Flink

When do you put the COM Soup in? At the beginning or closer to the end of cooking.

  3. CW

Buy the pre-bagged little baby potatoes and the mini bagged carrots and its even less work. Yay!

  4. Ger

It looks so good I can almost taste it! Thanks for the recipe Lina and Collin!

    • Collin (Mrs. Hip)

You are welcome, Ger! Enjoy! ๐Ÿ˜€

  6. mom2trewife2vic

Yay me! I’m putting together my meal plan for next week. This looks like a go. Tuesday is going to be nice and chilly here. Thanks for sharing this.

Oh and this is a post for Pinterest ๐Ÿ™‚

What kind of roast is best? We always buy chuck roast but it’s been soooo expensive lately…any other suggestions?

    • Lina Darnell

This was a chuck, I know it’s a bummer about beef prices lately! ๐Ÿ™

  8. Kathleen

mmmmm pot roast. I just pinned it!!

  9. T

I wish my roasts looked this good. Thanks for the recipe I’ll be using this in the near future.

  10. Angie

You lost me at having to brown the roast…If I have to pre-cook a slow cooker item in the morning, it is too complicated for me. There are gret receipes out there that don’t require that extra step (and extra dishes, clean up, etc). Just Google it.

    • Lina Darnell

Hi Angie you don’t have to brown if you don’t want to. Just an extra step that I feel is worth it, but just skip if you’d like ๐Ÿ™‚ Thanks, Lina

    • Rusty Bridges

I’m the same way, I like my slow-cooker recipes to be one step. BUT… it really makes a difference when you brown the roast first. That sear brings a flavor that no amount of slow cooking can add.

  11. Maureen

This sounds great! I found a recipe on Pinterest that we love for sliced need sandwiches. Place meat in crock pot. Put one stick of butter, one package aus jus mix, one package hidden valley mix and 6 pepperchinis. Cook on low for 8 hours. I like to let the juice chill am separate the fat off. Slice meet and serve warm with the juice on hoagie rolls. I have some in the crock pot now!

  12. Miranda

my grandma used this recipe forever and then I started trying it and I will never go back to making pot roast without Lipton Onion Soup again.

  13. Angie

The crock pot is my best friend! Do you have anymore easy recipes???

  14. dealgirl

Lina- Do you drain the canned tomatoes or just pour the entire can in? Thanks for sharing this- I’ll definitely be testing it out!

    • Lina Darnell

I pour it in ๐Ÿ™‚ Makes great broth! Enjoy

  15. Nena

Trying this right now. I wasn’t sure if I put the potatoes and carrots on the bottom, or the pot roast on the bottom and then the veggies on top?

    • linadarnell

I put the meat in then the rest on top! Thanks ๐Ÿ™‚

  16. Maria

I have made this recipe before to a T and find that it is just too bland. Any suggestions??

    • Kim

Maria, try adding some beef bouillon cubes and take pieces of garlic and poke them in holes all over the roast….it gives the meat a great flavor.

    • Sara

We used the same recipe as above but I could only find italian stewed tomatoes with garlic & italian herbs and ours tasted wonderful.

  17. Sara

I have made this for my family on two occasions. Keep the easy, healthy slowcooker meals coming….we love them!

  18. Jill

Lina! I’m so excited I’m trying this dish tomorrow. Thank you~ I already eat your 5 easy crock pot meals. So good!!

  19. Jill

I made the roast and it was so good. Hands down best roast I have ever made. ๐Ÿ™‚

  20. Elizabeth

Thanks for all the great recipes!!

    • Holly (Hip2Save Sidekick)

      Youโ€™re welcome!

  21. Diana C

My favorite crock pot recipe right now; I’ve made it for a couple of years now. I love how easy it is to put together. I have one of those crock pots that you can brown right in the pan so its an easy step for me. So delicious with golden potatoes, they cook up easily.

  22. Doug Cheek

is it possible to cook on high for 4 hours instead of the 8 hours on low?

  23. Pete Bowyer

Looks like this recipe has been online for decade.
Well, it was worth the wait. FANTASTIC!
Our roast was twice the size so we doubled everything. Glad we have a huge slow cooker. We cooked it for 8 hours (5 on high and 3 on low). We likely had too much in the cooker so it took everything longer to get hot, but we anticipated this which was good.
Here are the changes we made for personal taste….
    – broth instead of water
    – an onion (cut into quarters) just because we like onions
    – few dashes Magi and a packet of Oxo powder at the end for extra zing.

    • Jessica (Hip Sidekick)

So happy to hear how well you enjoyed this recipe, Pete! Thanks for sharing your suggestions! ๐Ÿค—โค๏ธ
