Chipotle Inspired Cilantro Lime Rice Burrito Bowl

Ingredients

  • 1 teaspoon vegetable oil or 1 teaspoon butter
  • 2 teaspoons fresh cilantro
  • 2/3 cup white Basmati rice
  • 1 cup water
  • juice from 1 lime
  • 1/2 teaspoon salt

Directions

In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Sauté onion and bell peppers and season as desired. (I used taco seasoning, and it was great!)

Add rice and lime juice, stir for 1 minute. Add water and salt and bring to a full rolling boil. At boiling, cover and turn down to simmer over low heat until rice is tender and the water is absorbed – about 25 minutes.

Add in the cilantro and fluff rice with a fork. Assemble bowl by starting with lettuce and layer rice, beans, peppers, onions, and corn. Add any additional toppings desired.

The recipe I am sharing with you today was inspired by Chipotle, one of my favorite places to eat – I especially love their burrito bowl! This homemade version of Chipotle’s cilantro lime rice bowl with black beans, sautéed bell peppers, and onions is a perfect meatless meal that you can customize to include whatever toppings your family enjoys.

This is such a gorgeous looking meal that’s both filling and great tasting. The cilantro lime rice really does taste like it was made at Chipotle, and I loved using the black beans that I made last week too. My meat and potato-loving hubby really enjoyed this meal as well.

      Mine too! They made their pinto beans vegan now too! Score! I always ask for extra cilantro on mine. Beans, veggies, brown rice, mild salsa, guacamole and a big handful of cilantro. The best non local eating out you can do!

    I made it tonight with high hopes. I have never followed a recipe so exactly in my life, but I think it turned out with too much lime taste and it was definitely stickier than I’d imagined it could be. I used a manual juicer for my one average lime and am wondering what amount of lime juice you’d say you actually used?

    I also used butter (not oil) and purchased basmati rice (Mahatma brand) and used a timer, so I’m not sure what else (besides too much lime juice) might account for the extreme stickiness. Thoughts? Thanks so much!!!

      Oh no! I’m sorry. I just hand squeezed lime. You can can definitely adjust lime to your taste. One thing I was thinking was try soaking rice before hand to get some of the starch out. And also don’t stir rice during cooking. Wish I could say more..
