Chipotle-Inspired Cilantro Lime & Black Bean Bowl

Chipotle Cilanto Lime Rice Burrito Bowl Hip2Save

As promised, this week I’ll be sharing five super simple, delicious, and budget-friendly meatless recipes. If you haven’t already, be sure to check out the post here where I offer easy to follow directions on How to Cook Dried Beans.

5 days of Meatless Recipes

The recipe I am sharing with you today was inspired by Chipotle, one of my favorite places to eat – I especially love their burrito bowl! This homemade version of Chipotle’s cilantro lime rice bowl with black beans, sautéed bell peppers and onions is a perfect meatless meal that you can customize to include whatever toppings your family enjoys.

Chipotle Inspired Cilantro Lime Rice Burrito Bowl

Cilantro Lime Rice
(adapted from Food.com)

1 teaspoon vegetable oil or 1 teaspoon butter
2 teaspoons fresh cilantro
2/3 cup white Basmati rice
1 cup water
juice from 1 lime
1/2 teaspoon salt

In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt and bring to a full rolling boil. At boiling, cover and turn down to simmer over low heat until rice is tender and the water is absorbed – about 25 minutes. Add in the cilantro and fluff rice with a fork.

Vegetarian Chipotle Inspired Burrito Bowl
(Makes 4 bowls)

2 cups cooked Cilantro Lime Rice from recipe above
1 cup Monterey Jack cheese
1 cup black beans
1/2 onion. 2 bell peppers, sliced
1 cup corn
1/2 head of lettuce, chopped

optional toppings:
sour cream
avocado or guacamole

Directions: Sauté onion and bell peppers with a small amount of butter and season as desired. I added a teaspoon of taco seasoning and it was great! Start with the lettuce and layer rice, beans, peppers, onions, and corn. Add any additional toppings desired.

How to make a chipotle burrito bowl

This is such a gorgeous looking meal that’s both filling and great tasting. The cilantro lime rice really does taste like it was made at Chipotle, and I loved using the black beans that I made last week too. My meat and potato loving hubby really enjoyed this meal as well.

I can’t wait to try this! Sometimes I get the bowl at Chipotle and find myself eating around the meat. We always try to incorporate at least a couple vegetarian meals per week so this will be a great one!

You can tie it tighter with green goddess dressing to taste like cantina bowl. Takes it up a notch!

I’m a little slow (ha!), so it took me a bit to find the print link, but I love the way you can customize what you want to print!

I am so looking forward to trying this cilantro lime rice. It’s my favorite thing about Chipotle.

  12. Emily

I’m vegan and the burrito bowl at Chipotle is my favorite! Thanks for the recipe!

    • Em

Mine too! They made their pinto beans vegan now too! Score! I always ask for extra cilantro on mine. Beans, veggies, brown rice, mild salsa, guacamole and a big handful of cilantro. The best non local eating out you can do!

  13. Lisa

We are vegetarians and I can’t wait to try this. Adding it to our grocery list!

  14. Kristina

We just bought a 20 lb bag of basmati rice from Costco the other day and I was just looking up meal ideas. This is going to be a new staple in our diet

I’m so pleased to see you are still commenting on this recipe!

I made it tonight with high hopes. I have never followed a recipe so exactly in my life, but I think it turned out with too much lime taste and it was definitely stickier than I’d imagined it could be. I used a manual juicer for my one average lime and am wondering what amount of lime juice you’d say you actually used?

I also used butter (not oil) and purchased basmati rice (Mahatma brand) and used a timer, so I’m not sure what else (besides too much lime juice) might account for the extreme stickiness. Thoughts? Thanks so much!!!

    • Lina (Hip's Modern Martha)

Oh no! I’m sorry. I just hand squeezed lime. You can can definitely adjust lime to your taste. One thing I was thinking was try soaking rice before hand to get some of the starch out. And also don’t stir rice during cooking. Wish I could say more..

Beautiful whole food, plant-based option! Huge kudos both on the approach to healthy eating AND on the very pretty presentation and photography. Great job!

    • Lina (Hip's Modern Martha)

      Thanks Maggie!
