Sift together dry ingredients for pancake mix in a large bowl (I like to use a pourable batter bowl).
2
Make a well in the middle of the mixture and add egg and melted butter.
3
Whisk well until smooth.
4
On a lightly oiled griddle, pour a strip of batter and add one piece cooked bacon on top.
5
Gently pour a strip of batter on top of the bacon.
6
Brown on both sides. Continue process for the rest of bacon slices.

The result is a pancake-covered bacon perfect for dipping into maple syrup. In my house, bacon is a Sunday treat that my hubby enjoys, and this is such a simple and unique way to serve it. Enjoy!

I make a version of this but instead of your process I pour pancake mix as you would a normal round pancake when it’s bubbling up I sprinkle crumble bacon on top then flip and cook thoroughly. It looks like a plain pancake from the top but when you cut into it there’s bacon!
I have made this and its totally gross!! The bacon becomes gross even if cooked before! Great idea but nasty! I think crumbled bacon would be much better!
My husband saw these on Facebook and has made them for us 3 times now. I am not a pancake eater but I LOVE these (he just uses store bought pancake mix though).
I cannot believe that I never thought about this because on Sunday mornings I make bacon and pancakes and I ALWAYS roll my bacon in my pancake and I use blueberry syrup
