Bacon Pancakes Recipe (Great for Father’s Day)

Bacon Pancakes Breakfast Idea Hip2Save

What’s better than bacon and pancakes? How about bacon inside pancakes?! 🙂

If you’re planning on making something special for Dad on Father’s Day, check out this easy and yummy idea for a fun spin on this delicious breakfast combination!

Bacon Pancakes Recipe

Ingredients:

1 package bacon, cooked (pictured is Farmer John thick cut bacon)

For pancakes, try this easy basic homemade mix (or use your favorite Pancake mix):
– 1 and 1/2 cups flour
– 3 and 1/2 teaspoons baking powder
– 1/4 teaspoon salt
– 1 tablespoon sugar
– 1 egg
– 1 and 1/4 cups milk
– 3 tablespoons butter, melted

How to make bacon pancakes Hip2Save

Directions:

Sift together dry ingredients for pancake mix in a large bowl (I like to use a pourable batter bowl). Make a well in the middle of the mixture and add egg and melted butter. Whisk well until smooth.

On a lightly oiled griddle, pour a strip of batter and add one piece cooked bacon on top. Gently pour a strip of batter on top of the bacon. Brown on both sides. Continue process for the rest of bacon slices.

The result is a pancake-covered bacon perfect for dipping into maple syrup. In my house, bacon is a Sunday treat that my hubby enjoys, and this is such a simple and unique way to serve it. Enjoy!

    Does any one have a homemade syrup recipe to go with this trying to get away from store bought syrup but so far mine has come out thin and runny

    I make a version of this but instead of your process I pour pancake mix as you would a normal round pancake when it’s bubbling up I sprinkle crumble bacon on top then flip and cook thoroughly. It looks like a plain pancake from the top but when you cut into it there’s bacon!

    I have made this and its totally gross!! The bacon becomes gross even if cooked before! Great idea but nasty! I think crumbled bacon would be much better!

    I cannot believe that I never thought about this because on Sunday mornings I make bacon and pancakes and I ALWAYS roll my bacon in my pancake and I use blueberry syrup
