Cranberry Fluff Salad

Ingredients

  • 2 bags of fresh cranberries, 12 oz. each
  • 1 cup sugar
  • 1 pint of heavy whipping cream (or equal amount of Cool Whip)
  • 1 can of crushed pineapple, 20 oz. drained
  • 7 ounces mini marshmallows
  • 1 cup chopped walnuts or pecans (optional, I left out)

Directions

Coarsely chop cranberries in a food processor.

In an extra large bowl, combine cranberries and sugar. Add pineapple and nuts.

In a separate smaller bowl, whip the cream into stiff peaks.

Fold whipped cream and marshmallows into cranberry mixture.

Refrigerate overnight. Stir before serving. Serves 12.

    Any alternates to cutting the fresh cranberries? Can they be chopped with a knife? Don’t have a food processor.

      Try pulsing 1/2 cup or so in a blender.

    I make this with a slight variation…I mix the cranberries with the sugar and let sit overnight (a couple hours would probably work too). Then proceed with recipe as usual. Letting is sit helps cut the sour/bitterness of the cranberries. Either way its delish!!!

    So I’m looking for input: to use heavy cream or Cool Whip? Whose made it? What is your preference?
    AND… Pecans or walnuts? What’s your preference? Please share you experience w/ me. Thanks!

      If you use heavy cream you will need to stabilize it. Just pick up plain unflavored gelatin near the Jello mixes. Personally I avoid Cool Whip like the plague. This recipe reminds me of my mother in law’s watergate salad. I have no idea why the word salad is part of it’s name because in place of the cranberries it uses jello pudding.

      My mom has made this for years. It is the family favorite. Whoever she uses Dream Whip. Make sure that you put your bowl and beaters in the freezer and get good and cold. This makes it fluffier. Make sure you follow the instructions on the box. She has always put in Black Walnuts as well. She puts two small bags of the walnuts in it. If we don’t have Cranberry Salad it’s not Thanksgiving or Christmas. Happy Cooking
