“arrive partially thawed or chilled”
That is simply deplorable. Dry ice and styro packs should ensure “brick hard” receipt. Once thawed, you can’t refreeze without losing tenderness, and quite possibly introducing harmful microbial content. A big “avoid” here.
I got these last time and they were frozen solid. No thawing or “chilling” at all; in fact, there was so much dry ice, I think I could have left them right in the Styrofoam cooler and not had them thaw out in 3 days.
