Ramen Noodle Taco Bowls Shake Things up on Taco Tuesday!

Ramen Taco Bowls

Ingredients

  • 2 packages Top Ramen, discard or save seasoning for other use
  • 1 pound ground beef or ground turkey
  • 1/2 white onion, chopped
  • 3 tablespoons taco seasoning
  • 10 oz. can Rotel tomatoes, undrained
  • 11 oz. can whole kernel corn, drained
  • 15 oz. can black beans, drained
  • handful chopped cilantro
  • optional garnish: avocado, tomato, salsa, and sour cream

Directions

On the stove, boil Ramen noodles (without seasoning) according to package directions, but only until slightly undercooked. Drain most of the liquid and set the noodles aside.

Chop up onions. Cook the meat until brown and throw in chopped onion and taco seasoning. Drain the grease if there is quite a bit of excess.

In the same skillet, mix in tomatoes, corn, black beans, cilantro, and noodles. Serve in bowls with additional desired toppings such as avocado, salsa, and sour cream.
