One Pan Chicken Pesto and Veggies

Ingredients

  • 1/2 cup prepared pesto
  • 12 oz. fresh brussels sprouts, trimmed, cut
  • 10 oz. fresh cauliflower florets
  • 1/2 cup grape tomatoes
  • 1 cup fresh asparagus, chopped
  • 1.5 pounds raw chicken breast, chopped in one inch pieces

Directions

In a large bowl, stir veggies and 1/4 cup pesto to coat. Place on a large sheet pan. (Cover sheet pan first with parchment paper for easy cleanup.)

Season chicken with salt & pepper. Coat chicken with 1/4 cup pesto, and add to the sheet pan.

Bake at 400 degrees for about 24-30 minutes until chicken is cooked and veggies are tender.

Love simple sheet pan meals?

Then you’ve gotta try out this delicious chicken pesto bake loaded with roasted veggies, basil pesto, and chicken. I love sheet pan meals because you can just throw everything on a pan, and bake a complete meal super easily! This chicken pesto version is my family’s favorite sheet pan meal right now, and the best part is only one dish to wash!

This one-pan meal is very versatile and gets bonus points because it can be pretty low in carbs depending on what you add!  Easily customize this dish by using veggies your family prefers and ones that fit your dietary needs. We’ve even added small potatoes with the veggies and that version is delicious too.

Hip Tip: Feel free to make your own basil pesto, or use a store-bought version. We love the prepared pesto from Costco! It’s very good and also convenient to use in other easy meals like sandwiches, pizza, pasta, ravioli, etc.

I think homemade roasted veggies and chicken are so comforting and one of my favorites to make at home. If your family loves pesto, then this easy dinner is a must-try. My kids were telling me last night as we ate it that, “Everything tastes better with pesto, even vegetables..” 😀

There are so many variations this pesto bake could work well with including sliced Italian sausage and peppers and even sliced pork tenderloin instead of chicken. I like that you can just grab veggies from the fridge that need to be used up as well. You can really make it your own to take the flavor to the next level. 🤤

    Does anyone know where in a grocery store you would find pesto?

      Yes usually by the dairy/cheese section and also sometimes delegated in the specialty cheeses and deli prepared foods.

      Some brands, you can find on the same aisle as the jarred pasta sauces. Barilla & Classico are the 2 I buy. The jars are small, but it will be enough for this dish.

    That pesto from Costco is very good, yes indeed. If you feel like you won’t go through the whole jar within a timely matter, you can definitely freeze it, or share with a friend. 🙂
