Love simple sheet pan meals?

Then you’ve gotta try out this delicious chicken pesto bake loaded with roasted veggies, basil pesto, and chicken. I love sheet pan meals because you can just throw everything on a pan, and bake a complete meal super easily! This chicken pesto version is my family’s favorite sheet pan meal right now, and the best part is only one dish to wash!

This one pan meal is very versatile and gets bonus points because it can be pretty low in carbs depending on what you add!  Easily customize this dish by using veggies your family prefers and ones that fit your dietary needs. We’ve even added small potatoes with the veggies and that version is delicious too.

Tip: Feel free to make your own basil pesto, or use a store bought version. We love the prepared pesto from Costco! It’s very good and also convenient to use in other easy meals like sandwiches, pizza, pasta, ravioli, etc.

Additional Notes

*Recipe idea heavily adapted from cookingclassy.com

I think homemade roasted veggies and chicken are so comforting and one of my favorites to make at home. If your family loves pesto, than this easy dinner is a must try. My kids were telling me last night as we ate it that “Everything tastes better with pesto, even vegetables..” 😀

There are so many variations this pesto bake could work well with including sliced Italian sausage and peppers, and even sliced pork tenderloin instead of chicken. I like that you can just grab veggies from the fridge that need to be used up as well.

This is such a delicious, quick and easy dinner idea!

Does anyone know where in a grocery store you would find pesto?

    • Lina D

Yes usually by the dairy/cheese section and also sometimes delegated in the specialty cheeses and deli prepared foods.

    • Mel

Some brands, you can find on the same aisle as the jarred pasta sauces. Barilla & Classico are the 2 I buy. The jars are small, but it will be enough for this dish.

    • Leslie Ramey

At my store it’s usually near the pasta sauce

Why do these posts exist? This is supposed to be about deals. If I want a recipe I’ll go to a recipe website. Please don’t pollute your site with these things. Or put them on a separate RSS feed so I don’t get all of this rubbish. Thank you!

    • Mel

WOW! So rude and nasty. Just scroll down if it doesn’t interest you. Hip2Save is more than just deals & bargains!

      • Matt Chase

Good to know! Then I’ll just remove this from my RSS!

Mel, please suggest me another site that doesn’t do rubbish like this. I want a site that is exclusively about deals . I already subscribe to “Hey It’s Free” and the “Freebies” subreddit but those are only about free stuff. I need a good website about deals, coupons and promos. I don’t care about recipes because I have servants that cook for me.

        • Nancy

Poor baby got up on the wrong side of the bed. This is a great website. You don’t like it, go away! Servants, indeed!

        • Krisp

Lol you have servants yet want to save money? Hypocritical.

        • Ricky

If deals are all you want definitely check out slickdeals.net

      • Sharon

Would it turn out too mushy if I made it in the morning and put it in the drug for my hubby to warm up when he gets home in the evening?

    • Kay

Matt, I didn’t subscribe to get recipe posts, but I appreciate these. If I don’t want to read, I skip. But most times I read these recipe posts. • Lina D

Ah thanks so much. We appreciate you ❤️

  17. Beth

Holy Moly. I can’t believe the audacity of some people to take the time to post a comment complaining about recipes. I mean, seriously??!! I don’t think of Hip2Save as solely a couponing blog. It is so much more than that and Lina, I look forward to your posts like crazy. Everything you make is so amazing. Sorry you had to deal with such a ridiculous comment.

    • Lina D

That is the nicest comment ever! ❤️ Thanks Beth!

    • Sarah

Absolutely agree. I wouldn’t have tried the Lasagna Soup-ever-if it wasn’t for the recipe posted here. Fabulous, freezes well, saves time and money making a large batch(or doing one with sausage and one for Meatless Monday) and freezing for Winter nights. Thank you, thank you.

      • Lina D

        Thanks Sarah!

  18. Sallys
