Easy Cornflake Chicken and Mini Waffles

Every day is #NationalWaffleDay when you make these easy cornflake chicken and waffles. This simple to make, family-friendly meal combination is a delicious salty/sweet combo. It’s sure to be a hit as a warm and comforting brunch or dinner! SO good.
Crunchy baked chicken!
The secret to this faux fried chicken is the crunchy cornflakes used as a brilliant coating. Chicken gets marinated in a seasoned buttermilk mixture and then dredged in crushed cornflakes mixed with melted butter. The result is a yummy baked chicken that is legitimately CRUNCHY!
Hip Tip: To get both sides of my chicken crispy, I bake my crunchy chicken tenders on a cooling rack stacked on top of a baking sheet.
Buy or make your favorite waffles!
There’s no shame in toasting your favorite store-bought waffles, or go ahead and make a batch of your favorite waffle recipe and cook them using a waffle iron. I actually used a boxed waffle mix for convenience (my family enjoys Kodiak Cakes Protein Waffle Baking Mix, which is what I used).
To make mini waffles, I poured about half of the batter in the middle of each section, instead of filling the entire waffle iron space.

Crunchy chicken tenders get served up between warm mini waffles, with maple syrup drizzled on top!
Ingredients
- 1.5 pounds raw chicken tenders
- 3/4 cup buttermilk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 3 cups cornflakes, crushed into 1 cup coarse crumbs
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon poultry seasoning
- 3 tablespoons butter, melted
- 10-12 mini waffles (your favorite recipe or boxed mix)
- Maple syrup for serving (if desired)

Preheat oven to 375 degrees.

In a bowl, stir buttermilk, salt, pepper, cayenne pepper, garlic powder, and onion powder together. Add chicken to the mixture and marinate for 30 minutes or overnight.

In a separate dish, mix crushed corn flakes, Cajun seasoning, poultry seasoning, and melted butter.

Dredge each piece of chicken in the cornflake mixture and place on a baking sheet. Bake at 375 degrees for about 30 minutes until chicken is browned and cooked through. (Chicken should reach 160 degrees when cooked.)

While chicken is baking, make waffles or toast pre-made waffles.

Serve chicken tenders with waffles, butter, and maple syrup if desired.

Chicken + Waffles = Winning
I love that the coating is both crunchy and a little spicy from the Cajun seasoning – but that can be adjusted to taste. Drizzle a little maple syrup on top for an awesome spicy/sweet combo. You can serve up this idea like a little sandwich with chicken in between the waffles, or with the chicken on top of the waffles. Either way, it’s delicious, so enjoy!

Not exactly related but speaking of waffles, I tried this sweet waffle hack the other day and it was amazing. I put a cinnamon roll (Trader Joe’s brand or you can use Pillsbury instead) in my waffle iron and closed it for about 3-4 min (mine is ceramic so it’s nonstick but you can spray cooking spray if yours needs it). Once it was done, I drizzled some of the icing over the top (thinned it out w/ some milk). It was incredible!!
