As one idea, you can book an 8 day/7 night cruise sailing from Miami to Ocho Rios, Jamaica; to George Town, Cayman Islands; to Cozumel, Mexico; to Havana, Cuba for as low as $428 per person when you book an interior room with two adults excluding government taxes and fees.
Some of Martha Stewart handpicked excursions for this cruise will include Konoko Falls & Murphy Hill Farm Tour in Jamacia, swimming with horses in the Cayman Islands, The Perfect Margarita Mixology Session in Cozumel, and Cultural Havana Rum & Cigars tour in Cuba. Note that excursions are not included in your cruise price.

If I did this, I would allow her to pick the excursions so that I could holiday like a rich person. I wouldn’t want her to plan my dollar store version of this trip.

True, the starting cruise price for INSIDE room is $428 w/o gov’t taxes, but it’s the shore excursions that add up. We went on a Caribbean cruise last fall which included Havana Cuba. Hubby, two kids and I did not choose an excursion at this port, due to the high cost. Riding in a classic car around Havana & seeing the sights was listed as $328 per person! We bought a map for three pesos and walked around on a self guided tour & kept to the open streets for our eight hours in port. We did not try to book an excursion without the cruise due to the fact that is a strict country & our bank is not recognized there, so it would be all cash transactions in that country. Typical excursions are start at $99-/+ per person at each port(through NCL), so if she is ‘hand picking’, who is to say she is picking budget friendly….
