I do like the copper pans, and they do work on induction…just not very well! If I am making a pan of scrambled eggs, I have to put the setting on the highest setting of 9 to get it cooking those eggs (and I like to cook my scrambled eggs low and slow). With my All-Clad pans, I have to be very careful because they work extremely well and heat quickly on induction, so it must just be the copper coating on the copper pans causing a resistance.
