    My son asked me to make a carrot cake for his birthday in March but he wasn’t here because of the quarantine. Then this past weekend he jokingly asked if I’d send him a carrot cake for Easter. Be kind of funny if this case of cake showed up at his house!

    I make my own carrot cake, store bought just isn’t the same. Mine doesn’t have any nutmeg which I think is too over powering. My mothers recipe:
    Carrot Cake: 3 C. shredded carrots; 1 1/2~2 c. sugar; 1 c. canola oil; 4 eggs; 1 tsp baking powder; 1 tsp soda; 1 tsp cinnamon; 1/2 tsp salt; 2 1/4 c. flour. Mix in order Pour in 9X13 pan Bake 350 30~35 min.

    Frosting: 8 oz cream cheese (room temp); 2 c powder sugar; 1 cube butter; 1 tsp vanilla. Beat until creamy
