Make 3-Ingredient Ice Cream Bread
Did you know you can make bread from ice cream?! Sun a fun recipe idea!
Instead of making the same ole’ banana bread, consider baking a loaf or two of yummy ice cream bread! I love this quick bread idea because it features just three main ingredients – ice cream, self-rising flour, and sugar.
It’s an easy recipe anyone can do, and it’s so fun to think about which flavor to use or add-ins for the top of the loaf.
I decided to test out two different flavor combos to see which one we would like best.
I paired the vanilla ice cream with rainbow sprinkles for one of the bread loaves. This one tastes quite similar to shortbread. I bet a slice with some fresh strawberries and whipped cream would be so delicious!
The other loaf I baked using cookies and cream ice cream with some crushed Oreo cookies on the top. Oh man… this one is so GOOD! I mean bread that tastes like Oreos? YES!

When making ice cream bread, keep these tips in mind –

- You can pretty much pick whichever flavor ice cream you’d like on this idea and any add-ins that sound good. I have read that frozen yogurt and non-dairy ice creams won’t work as well or even at all, so keep that in mind.

- My Hip sidekick, Jenna, baked this recipe using strawberry ice cream and sprinkles and loved that yummy combination!

- Make sure to let your ice cream soften and become almost room temp, and then measure out 2 cups. It will make the batter easier to mix and create a lighter texture.

- Don’t have self-rising flour? The recipe to make your own self-rising flour is 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, and 1/2 teaspoon of salt.

Soft and sweet homemade quick bread using ice cream! Easy and fun 3 ingredient recipe that you can customize with your favorite ice cream and toppings.
Ingredients
- 2 cups softened ice cream (any flavor)
- 1 1/2 cups self-rising flour
- 1/4 cup sugar
- optional add ins like sprinkles, crushed Oreo cookies, etc.
Directions

Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.

To a mixing bowl, add the ice cream, flour, and sugar. Mix for a few minutes using a spoon until batter is smooth.

Transfer the batter to a loaf pan, and smooth it out so it's even.

Sprinkle any additional topping, like the sprinkles or crushed Oreos, to the top before baking.
- For sprinkles ice cream bread: Use vanilla ice cream and 1/4 cup rainbow sprinkles.
- For cookies & cream ice cream bread: Use cookies & cream ice cream and top with 5 crushed Oreo cookies.

Bake for about 35-40 minutes, until an inserted toothpick comes back clean. Let cool, and then transfer to a cutting board to cut and serve.
This ice cream bread turned out awesome!
I loved both flavors, however, the vanilla sprinkle loaf is noticeably less sweet. It’d be a great basis for a sundae with maybe more ice cream or whipped cream on top. My family taste-tested them both, and the Oreo with cookies & cream combo loaf came out the clear winner! Yum!
This would be such a fun activity to do with the kids this summer at home. Enjoy!

Hmm I did see some keto versions if you search keto ice cream bread – looks like almond flour, erythritol, baking powder, a pint of keto ice cream. I haven’t tried yet, so don’t want to vouch for sure – but it seems possible!

Rebel is the BOMB!! Tastes just like real sugar ice cream. I love the coffee chip. For a treat, I get vanilla and blend it with keto lemonade to make Lina’s copycat Chick Fil A Frosted Lemonade.

I was thinking the same thing, especially since a box of cake mix is cheaper than ice cream. But if you bought it for a special occasion or on impulse and don’t want it tempting you in the freezer this would be a useful way to get rid of it (although I doubt the bread/cake version would be much healthier). Or if you bought a flavor and don’t care for it… or if you have a bunch left over after a birthday party…
I was wondering who thought of this originally. I can’t imagine poking around in my fridge/freezer looking for a snack and thinking “Oooh, ice cream! I know, I’ll add some flour to it!” LOL

These recipes are so easy and fun to make with kids! If you get some Walmart ice cream, the whole container is under $2 and have plenty of kid approved flavors. Generic sprinkles and maybe splurge on genuine Oreos. Overall, seems affordable and easy enough to try. The Depression area vanilla cake was a bit, found on H2S as well and the kids would also add sprinkles to it. Thanks so much Lina for some affordable baking ideas👏

Our Walmart ice cream is $2.97 for 48 ounces.
Ours is $1.98 different areas. So thankful too, because Breyers is sitting under $5 at our Walmart.
