This simple cheat method for making homemade cheesy focaccia pizza is a smart and delicious kitchen shortcut!

Craving fluffy, herby focaccia, but short on time? Say hello to your new weeknight dinner hack – Faux-caccia Pizza! Grab a bag of Rhodes dinner rolls and turn them into the easiest focaccia ever. You can serve it with olive oil and herbs, or top it with your favorite pizza fixings.
Why use frozen dinner rolls?
Rhodes frozen dinner rolls are a gift to busy bakers. They’re made with real yeast and simple ingredients, and they rise beautifully, just like homemade dough. This makes them the perfect shortcut to bakery-quality bread at home. I also make gooey cinnamon rolls using Rhodes as a shortcut, and they are so delicious!

Other reasons to love this focaccia pizza recipe:
- No kneading, no mixing, no fuss.
- Perfect for beginners or anyone short on time.
- This looks impressive, but takes minimal effort. (My favorite recipes! )
- Customizable with whatever toppings you love or have on hand.

Quick Focaccia Pizza From Frozen Rolls
Thaw frozen rolls and use this as a base to bake focaccia bread with your favorite pizza toppings
Ingredients
For the focaccia::
- 20 frozen Rhodes dinner rolls
- 4 tablespoons olive oil, divided
- 1/2 teaspoon dried Italian herbs (I used Kinder's Butter Steakhouse blend)
Pizza toppings:
- 1/2 cup pizza sauce (or desired amount)
- 1 cup shredded Mozzerella cheese
- 1/2 cup feta cheese crumbles
- 1/2 cup pepperoni
- 2 tablespoons black olive slices
Directions
1
Drizzle a 9x13 pan with a couple of tablespoons of olive oil on the bottom. Place the frozen rolls in the pan and toss them in the olive oil so they are covered. Space them out evenly. Cover loosely with plastic wrap and let them rise until doubled—this will take about 3 hours in a warm kitchen.
Pro tip: You can thaw the rolls in the fridge overnight and set them out to rise in the morning if you're planning ahead.
2
Once the rolls have risen and are puffy enough to fill most of the pan, drizzle a bit more olive oil over the top. Then use your fingertips to gently press into the dough, creating those classic focaccia dimples. Preheat the oven to 375 degrees.
3
Sprinkle the top generously with your choice of herbs or a seasoning blend. Add all the pizza toppings.
4
Bake in the oven for 20–25 minutes, or until the top is golden brown. Slice and serve warm.
Extra tips for this easy focaccia pizza recipe:
- If you’d like to add more pizza toppings, please add them as desired. I served more pizza sauce to dip in with ours, and that worked out well! Honestly, this is so easy to adapt to taste.
- You can prep the pan with the rolls still frozen, cover with plastic, and thaw in the fridge the night beforehand. Then pop in the oven the next day. The beauty of this recipe is that you can’t really ruin them by overproofing. You’ll be smashing the dough with your hands before baking. That’s the fun part!

I know your family will love this easy Rhodes rolls focaccia too!
Keep a bag of Rhodes in your freezer, and fresh-baked focaccia is always just a few hours away. Focaccia is traditionally served as an appetizer, but this is a fun way to make it into more of a meal. Maybe serve it alongside a big salad for a yummy idea!
