5 Ingredient Gluten-Free Chocolate Chip Cookies

Gluten-Free Chocolate Chip Cookies

Ingredients
- 1 cup Almond Butter
- 1/2 cup brown sugar, packed
- 1 cup chocolate chips
- 1/2 teaspoon salt
- 2 eggs
- splash of vanilla extract (optional)
Directions

Preheat oven to 350 degrees and mix together all ingredients in a large bowl until dough forms.

Place teaspoon sized amounts of dough on a parchment paper lined cookie sheet or a silicone lined baking sheet like pictured.

Bake for 10 minutes and transfer to cooling rack to cool.

I’ve done the same thing with peanut butter instead of almond butter – and they were delicious! I’m sure this would work just as well.
Yes! So good. I subbed 1/2 of the brown sugar for powdered sugar – fearing they would be gritty. Let them cool most of the way on the cookie sheet, when warm they fell apart but after cooling they held together & were delish!

Anybody ever try these with honey or maple syrup to sweeten?
That is going to mess with your wet to dry ratios. You could probably sub coconut crystals/coconut sugar for the brn sugar though.
With regard to the coconut sugar, I believe you’d need to add more moisture. It’s very absorbent.
I make similar cookies / 1 cup nut butter 1 egg 1/3 cup honey 1 tsp vanilla 1/2 tsp baking soda and then add handful of coconut handful of oatmeal and chocolate chips. Amazing!!!

There is egg substitute liquid thing in what looks like a milk container in some supermarkets
I am vegan so when baking I replace eggs with flax seeds and water. 1 tbsp ground flax seeds + 3 tbsp water is equal to 1 egg. You could also use 1/3 cup applesauce.
I was just going to suggest this. My son has an egg allergy and this is what we use. Tip when using Flax seed. I like the golden best instead of the black. Fresh ground is best as well. Also let it sit for about 5 minutes on the counter after adding water. Mix with fork then put it in the fridge for another 5-10 minutes and it should be the consistency of eggs. I use flax seed in cookies while I use applesauce in cakes. There is also a product called EnerG egg replacer. I have used it, but have had better luck with flax and applesauce. I would use flax in this recipe.

I have made this before and its awesome! You can use any nut butter, really ,but since the almond butter is milder tasting its works really well. When you use peanut butter there is a peanut butter taste, which I love! I have also done a dried cranberry and nut version, m&ms, and raison/nut version. Very versatile, thanks Lina!

Has anyone tried this with a sugar substitute like Stevia so they would be low carb?

If she can tolerate seeds then sunflower butter is usually the sub for nut butter.
Though it doesn’t apply to this recipe sunflower butter used in recipes that also use baking soda then the goods have a tendency to turn green during the baking process.

Yes, I meant sunflower SEED butter not sunflower butter… haha that would be interesting. Sunbutter is a ready made brand available most places that sell peanut butter alternatives.
You can also use soybutter…we find it priced fairly reasonably at Wal-Mart…called WOW butter for it can be used in school settings…if you have a severe peanut allergy like we do, you probably can’t use other nut butters for fear of cross contamination. Soybutter is our family’s “nut butter”!!
Nut butters are usually pricey. I can get peanut butter at a reasonable price due to coupons, but I haven’t seen coupons for almond butter. Can anyone tell me a good price point for almond butter? Thanks! 🙂

You can make your own almond butter. It is so easy! Just put the almonds in a food processor or blender and process until it’s almond butter. It’s going to look like it’s not working, but just keep going!

Every once in a while Maranatha nut butter will have a coupon. There were a couple recently and I think if you sign up on their website for emails you can get one too. I don’t like to pay more than about six dollars for the small jars(I think 12oz?) of almond or cashew butter. If you have a high powered blender or food processor at home and have a health food store that sells the “bits and pieces” of nuts like cashews for fairly cheap then that is also a good way to get nut butters. There are lots of tutorials online just google homemade almond or cashew butter and you should be able to find one.
