I learned to bake bread by hand 45 years ago and have been using bread machines for 25-30 years, and, frankly, I don’t know why this Cook’s Essentials only received 3.3 stars, because my bread on the first use of the Cook’s Essentials is so impressive, that if I could rate the Cook’s Essentials higher, I would. I bought two as I normally make one loaf of yeast bread and one loaf of sourdough (no yeast) at the same time.
FIRST, I did not use any recipe from the manual. I use Baker’s Percentages to create my bread recipes and I used a recipe I make often. My bread from the Cook’s Essentials is soft, moist and absolutely delicious. I also weigh my ingredients in grams for consistent results as measuring cups are notoriously inaccurate from one manufacturer to the next and from one cup to the next, even if you are using the same measuring cup. Tomorrow I am making sourdough (not from the manual) in my Cook’s Essentials.
As a tip, after adding in the ingredients, DO NOT walk away. Watch the ingredients mix for about 5-10 minutes to make sure all of the flour mixes in. I use a rubber spatula to push the dry ingredients down from the side of the wall. You can come back and check to make sure all of the ingredients are fully incorporated. Opening the lid a few times, in the beginning, is fine, BUT DO NOT open it constantly just to watch. The dough needs the heat to rise properly and constantly opening the lid allows heat to escape and the dough to deflate.
