cake mix with mug cake

This quick mug cake idea holds some nostalgia for me.

When my now older kids were little, I had fun making this 3-2-1 mug cake with them. In fact, they actually taught this to me as one of their teachers kept the supplies in the classroom and used the mug cakes as classroom incentive treats.

It’s perfect if you don’t want to bake an entire cake, as it makes a cute small portion for dessert. You can top your 321 mug cake with sprinkles or prepared frosting or whipped cream.

The result is a delicious individual mug cake with a light fluffy texture that’s easy and fast to make when a sweet tooth is calling. Feel free experiment with all the various boxed cake flavors- YUM!

two boxes of cake mix next to an easy dessert recipe

Angel food cake mix is the secret to making this mug cake a “2-ingredient” recipe!

Simply start by combining a boxed angel food cake mix with any other flavor of boxed cake mix. Angel food cake has powdered eggs which will allow you to skip adding additional eggs and yield a very fluffy texture cake.

This 321 mug cake is actually a very popular Weight Watchers idea and I believe it’s 5 points and around 100 calories without frosting, according to readers in the comments.

Tips for making the best 321 mug cake for one:

  • Consider pouring both cake mixes into a gallon storage bag or storage container, mix thoroughly, and store to have on hand for future mug cakes.
  • The cake mixture should last up to 3 months stored in the pantry, or longer in the fridge, according to bakinghow.com.
  • When it comes to how to make cake in the microwave, you want to be sure to use a large enough microwave-safe mug or baking ramekin like mine so that your cake won’t bubble over as it expands. The size I am using is 8 oz. and seems to be perfect.

I have a few boxes of brownie mix that I got on sale and never finished using up because I’m rarely in the mood to make a whole pan of brownies. I thought I’d give this a whirl, but didn’t really expect much. 3T brownie mix, 2T water and 1 minute in the microwave later, it actually worked! I had a tasty little brownie treat! (Followed by another one after that! They’re good!). Thanks! Now I will actually use up my old brownie mixes and have a tasty little chocolate fix whenever I need!

What ounce/size ramekins work well for this recipe? I don’t want to have overflow issues. πŸ˜‰

    • Lina (Hip's Modern Martha)

I have 7ounce sized but you can use a small bowl or mug as well.

  11. Jennifer

  15. Aysha

Today my sweet little 17 month old asked me for cake…she’s got many allergies including egg and dairy so we stay away from cakes…she has never had cake or pancake or any of that sort of baked food unfortunately. Anyhow, today I found a recipe that calls for cake mix and a can of soda. We had Betty crocker cake mix which is dairy free, and combined with one can of Sierra mist. Cooked into cupcakes and baked for 15 minutes. She loved it ! Egg dairy nut corn etc free!

    • Lina (Hip's Modern Martha)

Oh I’ve heard of that! Very cool πŸ™‚

    • Just Me

You could make the “depression cake” also. It’s flour, cocoa ( they other than chocolate versions) , oil, water, little vinegar , vanilla extract and water. The batter is so good!
Think it was posted here if not google it. There’s another name for it but I don’t remember. Crazy cake ?

    • Ashley

Check the Betty Crocker sugar cookie mix too! I was out of eggs once and had put in the oil and water already when I discovered I had no eggs. So I was like whatever, I’m just going to bake them anyway. And they were awesome!! With no eggs at all :). Not sure if it’s dairy free too. But worth a look!

Saw this some time back. We made some with strawberry and would put fresh berries on it. Also lemon and even spice cake. We just used regular cake mix with the angle food , like the ones we all got in great deal at Target over the past few weeks.

Can also use cake mix 1 tub cool whip and 1 egg. Mix together drop by spoonful on cookie sheet. Bake at 350 degrees till light brown. Makes the best soft cookies.

  17. Elaine Brennan

Chocolate cake with Nestles Quik added to mix. Excellent!!!

  18. Sharon Jordan

I just tried the cake in the mug and I think it’s a brilliants!πŸ₯°

      Oh that’s so awesome Sharon!

You’re welcome, Shari! Great idea for Christmas gifts! Merry Christmas to you too! πŸŽ„πŸ₯°
