Here’s an easy weeknight meal idea that you can throw in the slow cooker – delicious shredded BBQ chicken using your favorite brand of root beer and BBQ sauce! This winning 3-ingredient recipe can also be made with a pork roast instead for a yummy pulled pork meal.
Slow Cooker BBQ Chicken
(Adapted from The Frugal Girls)
4 chicken breasts
1/2 bottle or can of root beer (full sugar not diet) – you can use Coke or Dr. Pepper if you prefer
18 oz. bottle of BBQ sauce, I used Stubbs
1/4 Tsp Salt
1/4 Tsp Pepper
Place chicken breasts and root beer in a slow cooker and cook for about 3 hours on high. Shred chicken and drain most of the liquid but leave a little liquid so chicken doesn’t get dry. Add salt and pepper. Pour in bottle of BBQ sauce and let cook another 15-20 minutes in slow cooker. Serve on rolls. I sometimes add avocado or even sauteed onion to serve on the sandwich. Yum!
This is definitely one of those easy meals the entire family eats without any complaints and that makes this busy mom very happy! 🙂
