3 Ingredient Slow Cooker BBQ Chicken

Slow Cooker BBQ Chicken Hip2Save.com

Here’s an easy weeknight meal idea that you can throw in the slow cooker – delicious shredded BBQ chicken using your favorite brand of root beer and BBQ sauce! This winning 3-ingredient recipe can also be made with a pork roast instead for a yummy pulled pork meal.

Slow Cooker BBQ Chicken

(Adapted from The Frugal Girls)

Ingredients

4 chicken breasts
1/2 bottle or can of root beer (full sugar not diet) – you can use Coke or Dr. Pepper if you prefer
18 oz. bottle of BBQ sauce, I used Stubbs
1/4 Tsp Salt
1/4 Tsp Pepper

How to make root beer bbq chicken sandwiches Hip2SaveDirections:

Place chicken breasts and root beer in a slow cooker and cook for about 3 hours on high. Shred chicken and drain most of the liquid but leave a little liquid so chicken doesn’t get dry. Add salt and pepper. Pour in bottle of BBQ sauce and let cook another 15-20 minutes in slow cooker. Serve on rolls. I sometimes add avocado or even sauteed onion to serve on the sandwich. Yum!

This is definitely one of those easy meals the entire family eats without any complaints and that makes this busy mom very happy! 🙂

I will have to try this. Use Stubbs frequently. Thanks

It looks super good, Lina! I know this sounds gross, but these sandwiches would taste awesome with a little cream cheese on them too. Thank you for sharing! 🐢

Cheese is always a great idea! Thanks Julia 😀

No one in my family will eat this but me. I would load up a bun with coleslaw and pile it with chicken and pickles.

    • MommaNguyen

Same here! Hubby thinks shredded or pulled meat of any kind is gross.

    • ResseCup

Yes, that’s how I like my sandwich with pickles and coleslaw. I’m going to fix this for our Kentucky Derby party.

      • Lina (Hip's Modern Martha)

        Yum! Sounds great 😀

We do coleslaw on bbq pork.. So prob just as good on chicken.

I do this with pulled pork. Will have to try the chicken some time! PS The pulled pork version freezes very well. (I imagine this would too).

    • Lynne

Yes pulled pork freezes very well. I usually make two small pork roasts in my large crockpot. Eat what we want for one meal and portion everything thats left into freezer bags and have some easy meals for later on!

You honestly don’t need the rootbeer! I just so BBQ sauce and chicken… Less calories! And totally yummy! You c an even freeze it ahead of time. I’ve done this for new moms to be! 🙂

I think the soda acts as a tenderizer so it doesn’t dry the meat out (breast meat especially) in the crockpot. I have a crockpot rib recipe that calls for 1/2 c soda and I can taste the difference in the meat when I skip the soda!

I make this frequently & it’s a hit with even the picky kid! I add a thinly sliced onion to the bottom of the crockpot, put the pork on top, pour over the root beer and about a tablespoon of apple cider vinegar (this tenderizes the meat even more!). After cooking, strain the liquid out and keep the onions to add back after pulling the pork. Even my MIL asked me for the recipe!

      Yum! Thanks for sharing!

I bet thighs would be great with this recipe. I kind of prefer thighs for making shredded chicken 🙂 yummy!!

    • Lina (Hip's Modern Martha)

      Yes! Great idea.

  9. Andrea

I make shredded chicken in the crock pot but I only use chicken, open pit bbq, sauce and Italian dressing

Shout out from a girl in Sioux City to Hip2save for using Sioux City root beer!

And a shout out too from Austin, Texas for using Stubbs BBQ sauce! Yay 🙂
